Zucchini Pizza Boats
End of summer… Means creative summer dishes. But first, how the heck is it already September? How did that happen? It seems like yesterday we were all watching the TV and social media to see what would unfold with Covid and the month of March was PAINFUL… and then all of a sudden… It is September. How’s that happen? I hope you are all hanging in there. I have felt extra isolated lately. I feel like I am ready for a little bit of normalcy in my life. Maybe not the returning back to the office part, at least not full weeks. I like working from home. However, being someone…

Winter Brussel Sprouts & Onion Sauté
Happy December! Seriously where in the world has this year gone? I apologize for my lack of posts this year… I have had a lot of change happening. Good change I think, but change none the less. My new job is going well, it is SO new to me, but thankfully I work with a lot of really supportive people. It is nice to know that people are there to work with you and not against you. Changing jobs has literally turned my life upside down..my schedule has changed, I have had many personal struggles and new hurdles to try and conquer this year. To say the least. Changes is…

Check this girl out. Her recipes are EPIC! Of course, it being burger month I had to come up with something worthy of the event. To me having burgers in the summer is a must. Growing up in Kansas City (Kansas NOT Missouri), you…

Holy August Batman! Is anyone else’s garden exploding? Mine is! Every day I am bringing in more tomatoes, squash, peppers, herbs… I mean don’t get me wrong, I love having fresh vegetables and herbs right outside my door, but good lord. There could be a small farm stand at the end of my driveway and I could STILL have too much. Makes for a happy coworkers and lots of ideas for a food blogger 😉 All kidding aside I really do enjoy having a garden. It keeps me busy and I love knowing where my food comes from. Clearly anyone who knows me, knows that I am all about eating…

Roasted White Sweet Potato Fries
So this weekend we got some serious snow. Not as serious as some of the other storms we have had, but the rate at which it came down was the problem. I tend to like snow, but when you have to clean it up? Not so much fun anymore. I still think is is beautiful and since Patrick and I live in the woods, it makes for some pretty amazing views. We also tend to find some interesting prints in our snow after a big one, not sure if it is the neighbors cat or a animals from the woods. Probably a bit of both right? Speaking of critters… I…

Zucchini Fritters
I am swimming in zucchini… So many zucchini! and since I have a person in my house that hates zucchini, I have to come up with creative ways to get it into dinners. Lucky for me, there is one night a week right now where I am on my own for dinner, so guess what my dinners have consisted of. Wow, how did you guess? Yup, zucchini. I will pretty much eat it any which way, but I wanted to try something different. Do you ever get like that? Where you know there are a million ways you have already had something, and they were all super delicious but you…

Sweet Potato Chips
Ok, so it has literally been a month since I have posted….whatttt the heck!? I apologize my dear friends, my priorities have changed so much this past year. I adore my little blog here, but with things that are happening in my life, I am finding it hard to to have to time post and share my recipes. Getting married is really a full time job by itself, not to mention the actual job that I have that I work 8 hours at and then try to get some gym time in and also you know…sleep and renovate my home. Sheesh. Who knew? I still love to cook and I…

Pan-Seared Scallops with Cauliflower “Mash”
Do you like home renovation projects? Patrick and I are constantly working on our house. There is a sense of satisfaction when you finish and it is something you have worked on and it actually looks nice! Granted my parents have been nice enough to show us the ropes on many, many, MANY home improvement tricks. I have watched my parents flip houses for years and have been a part of many of them. So I suppose it is only natural that I am wanting to do the same thing with my own. I am pretty sure Patrick thinks I am nuts, but he seems to be enjoying the process…

How sad is it that 7:30am is sleeping in?? Today I am sharing with you one of my most favorite things to eat… Carrots! If you know me at all, you know that I have a large small affinity to carrots. A few years back, I even shared a story about how much I loved carrots as a kid too. So much so that I turned orange! Yes, actually turned…
