Sesame Carrot Salad

Happy Friday!

I cannot tell you how glad I am that it is going to be the weekend. This week has been hellish at work and I am looking forward to getting a break.

Maybe even sleep in til 7:30am!

How sad is it that 7:30am is sleeping in??

Today I am sharing with you one of my most favorite things to eat…

Carrots!

If you know me at all, you know that I have a large small affinity to carrots. A few years back, I even shared a story about how much I loved carrots as a kid too.

So much so that I turned orange!

Yes, actually turned orange. Like a carrot.

I mean even my Instagram Account tells you I love carrots!

This yummy salad can be added onto just about anything. Tossed with anything, along side of anything.

Unless of course you don’t like carrots, which would just be crazy talk.

Seriously though, if you don’t like carrots I am not sure we can be friends.

I kid, I kid.

But, really.

Sesame Carrot Salad

Ingredients
  • 3 cups matchstick-cut carrots
  • 1 1/2 tablespoons flax seeds
  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon dark sesame oil
  • 1 teaspoon lower-sodium soy sauce
  • 1/2 teaspoon freshly ground black pepper
Instructions
  1. Combine carrots, sesame seeds, vinegar, sesame oil, soy sauce, and pepper in a large bowl; toss well to coat.
