One of those days…

….yesterday. (that’s a good Beatles song btdubs – “btdubs” is how I say bytheway, because if you say ‘W’ out loud it can be said as “dub” – just a little fun fact about Raven πŸ˜‰ )

Yesterday was one of those days where it was absolutely necessary to blast AC/DC on my way home from work…and also one of those days where I couldn’t get to the wine bottle fast enough after getting home. Whew…work has been so busy this week that I can barely keep my head above water. I literally embodied the phrase “looking like a chicken with her head cut off” yesterday.

So, after having an extremely busy day…and in general a pretty busy week, I was having a hard time deciding what I should make myself for dinner. I knew that I wasn’t going to go crazy and make something super duper fancy. I decided to just hang out with my wine glass for a bit after work and just relaxxxxx…..

I started looking through my pantry and fridge…”Wow, I need to go grocery shopping…like badly!” haha…needless to say there wasn’t much to choose from. I did, however, have vegetables…and we all know how much I enjoy vegetables. I had some french bread. Considering I really didn’t want to make too much and I really didn’t want to rush to refill the pantry with things from the grocery store. I just decided to make a salad (shocking! I know :-P).

I took my time slicing some vegetables and making some homemade dressing (which I really do prefer over in the bottle). I thought maybe if I take 2.5 hours to cut vegetables and drink some wine maybe I will calm down from my day…haha

Dressing - garlic, pepper, salt, basil, mint, thyme, olive oil, balsamic vinegar

I toasted up the french bread that I had that was about a day old to go with my salad too and still didn’t feel like the salad was complete….then I had an AHA! moment. When I was in college…there was only a few things I could afford. Which included bread, pickles, eggs, and occasionally cereal…haha (if you haven’t already noticed, I tend to exaggerate just a tad πŸ˜‰ ). But it was tight in college! So I really didn’t have a lot of things on hand. I used to eat eggs ALL THE TIME though. They are quick, easy, healthy, and inexpensive. In remembering my college days, I decided to put an egg on my salad (and not boiled eggs) because I used to do that all the time. Which I know sounds kinda weird to some people, but it is actually really good!

After having a rough day/week I have to say that cooking (and having a little bit of wine) really calmed me down. Even if it was just making a salad, it gave me some time to escape from my daily grind and enjoy the smaller things. πŸ™‚
