Chocolate Caramel Brownies

What a weekend!

Eclipse Dance Company was all over the place!

Eclipse

Our big event, among others this weekend, was the International Festival of Arts and Ideas. We had a 30  minute piece that we put on for the festival and it went really well.

30 minutes of dancing straight through, btdubs. No stopping. Thirty.Minutes.Straight.Through.

Stage

Whew! It was a warm day as well and the performance was on an outside stage, so it was interesting to say the least. With all of the extra rehearsals we have been pulling this month, 2 sometimes 3 times a week from 9pm-midnight.

It has been a very tense and stressful month, but we made it!

I think half of the company ended up being sick at the end of it all, but at least we made it through and the performance seemed to be really well received.

A few of us went out for dinner afterwards to celebrate with drinks. It was at a restaurant in New Haven, CT called 116 Crown.

This place is a true gem when it comes to cocktails. The vast array of drinks they had was astounding. Truly.

I enjoyed what they called the Jolly Roger, which included: four roses reserve bourbon, passion fruit purée, pure can syrup, cayenne, soda – served straight up.

It was sweet and bitter and also spicy at the same time!

Um…ah-mazing.

One of my girlfriends and I also split a rather enjoyable cheese and bread plate. Served on a rustic piece of wood. Yes please.

All of us enjoyed some rather interesting drinks. Definitely someplace that would be excellent for a before an event or after for that matter.

If you live in the CT area, you should definitely give it a try.

(I do apologize for the semi crappy pictures at the restaurant, they were taken with my phone not with my fancy shmancy camera)

Since I knew it was going to be a long weekend for the dance company, and because I had a few requests, I made some treats for everyone to enjoy during the weekend.

We were moving around so much during the days, that I knew it wouldn’t matter if I made something that wasn’t so great for you. Which is unlike me, but I think we deserved it after the weekend we had.

The recipe I made was something that my mom used to make years and years ago.

Sometimes loads of chocolate are needed to make the days go by faster.

I really enjoyed making this one because it was something that my dad said he remembered from when they were first married that my mom use to make.

Be aware that this recipe does call for nuts, I made my batch half and half so that everyone could enjoy.

These brownies are rich and chocolatey and totally satisfying. Personally, I think it would be difficult to eat more than one because they are so rich, but hey. Who knows.

You will also notice that these are not good for you and they are not low calorie and they use some ingredients that aren’t my usual style.

Sometimes you have to break the mold and do something different.

These are also going to be my donation item for Kita with the Muffins for Muffins bake sale. So keep your eye out. Sale happens on July 17th!

Enjoy!

A rich caramel brownie that takes no time to make!
Ingredients
  • 1 package Devil’s Food Cake Mix
  • 1 cup sliced Almonds
  • 1/2 cup evaporated milk
  • 35 (10 ounces) light caramels
  • 1/3 cup evaporated milk (yes, I listed it twice)
  • 1 cup semi-sweet chocolate chips
  • 1/3 cup butter
Instructions
  1. Preheat oven to 350º
  2. In a large bowl place the cake mix. Cut in the butter. Stir in /2 cup evaporated milk. This consistency will by stiff and the dough will be in a ball if it is correct.
  3. Spread half of the batter in a greased 13″x9″x2″ baking pan. Use your fingers to smoosh it into the pan. It will be about 1/4″ thick. Don’t be scared, it won’t burn!
  4. Bake the thin layer in the oven for about 15 minutes.
  5. In a small bowl or saucepan, combine the caramels and 1/3 cup evaporated milk. Melt slowly and stirring often. Be careful not to burn the caramel.
  6. Take the baked layer from the oven and sprinkle the chocolate chips evenly over the layer. Sprinkle nuts onto the chocolate chips either on the entire layer or over half like I did to make half and half.
  7. Drizzle caramel over mixture. Return to oven and cook for about 20 minutes (top will be soft). Cool completely before cutting.
