Baked Tomatoes with Corn and Goat Cheese

Happy Monday! How is your Monday going? Did you have a nice weekend? My weekend was full of master bathroom remodeling and purchasing… ::blank look:: Which basically means, I am poor. Haha, bathroom remodels are expensive! Holy shmokes. We are limited in our space for the master bath. It isn’t a very large bathroom so we are trying to maximize our space. We currently have a whirlpool in our bathroom and it literally takes up half the room…eeeekk! So we are going to adjust that and remove the whirlpool and put something that in that is going to save a butt-load of space in that tiny area (about 10″). I…

    Provençale Chicken

Hello everyone, how is life treating ya? I have to say I am pretty stressed. We had a rather unfortunate occurrence at our house this past weekend which really put a damper on the week. We came home to some lovely water damage in our powder room, yea the one I showed you guys before that was completely done. The ceiling is not salvageable. Which means taking down the ceiling, replacing the drywall, redoing the plastering, priming and painting and potentially having to redo the crown molding and caulking that is already been done. How did that happen you ask? Well, remember how I told you about how we were…

    Hoisin Beef

Ahhh the warm California air is so glorious! So what am I doing blogging right?? Well, I had this post saved so that I could post it while I was away because I did promise you all another recipe from my Great Food for Great Friends post. Here is the last recipe from the night of cooking with my friends. The recipe is for Hoisin Beef skewers. I wanted to make something that was easy for my guests to eat AND enjoy. That is why I decided to skewer the beef. The original recipe was for beef tenderloin steaks but this was a little less formal and more keeping with…

Put it on a pita, put it on veggies, put it on chips, use it as spread for a sandwich….I lik’em all! Since I have been on the detox my snack in the afternoon is some veggies with hummus (which is…

    Stuffed Peppers

Hello all! I am on Day 8 of the detox! I am trusting you are having a grand start to your week. Mine was not so grand, I have to admit. Work has been less than desirable for the past 2 days. Lots of issues and stress that has been really keeping me very very busy. I wanted to update you all on my progress! So far so good! We are still going strong and it is Day 8. I can’t believe that things are still going so well but they are. This weekend was very hard for me. I am used to baking on Saturday. That is normally my…

    My First Canning Experience

YES! I did it! I canned for the first time ever this past weekend. I have to say, it was much easier than I thought it would be. Strangely enough, the only thing that took a good amount of time was the cooling down of the jars. I have always seen my mother canning since I was little. Jelly, tomatoes, salsa, sauce, cucumbers, peppers, anything she could, she was canning. Still does to this day. I mean even HER mother and my Dad’s mother canned! I used to watch it when I was little and the women in my family would say “some day you will being doing this too,…

    Summer Bread

Ingredients for Bread: Loaf of Italian bread (can be a day old) 3-4 tomatoes 1 green bell pepper fresh mozzarella 6-7 basil leaves 2-3 cloves garlic Olive oil (2 tablespoons or so) Preheat oven to 350 ° Now that summer is coming to a close this is what I am going to miss from the summer the most. My garden….there is absolutely nothing better to me that fresh produce from your garden. Everything tastes better, it even feels better making it when it comes from your own garden/home. This bread is something that I really enjoy and I make often during the summer because it is so tasty and just…

    One of those days…

….yesterday. (that’s a good Beatles song btdubs – “btdubs” is how I say bytheway, because if you say ‘W’ out loud it can be said as “dub” – just a little fun fact about Raven 😉 ) Yesterday was one of those days where it was absolutely necessary to blast AC/DC on my way home from work…and also one of those days where I couldn’t get to the wine bottle fast enough after getting home. Whew…work has been so busy this week that I can barely keep my head above water. I literally embodied the phrase “looking like a chicken with her head cut off” yesterday. So, after having an…

    Chicken and Veggies

Little more food for everyone…I enjoy cooking with fresh ingredients…I seldom cook with anything but! It is hard sometimes in the winter though, which is why I love the summer SO much! 🙂 (sauté mushrooms with butter and garlic, toss in tomatoes for sweet taste – cook on high heat until liquid is reduced. Throw in peppers at last second so they do not lose their bright colors.) (marinate chicken in lemon juice, salt, pepper, rosemary, and olive oil for an hour. Grill up and eat warm) Ingredients: Chicken, Rosemary, Red peppers, Green peppers, Mushrooms, tomatoes, garlic, salt and pepper to taste.
