Patrick and I are currently working on the Master bathroom and we are starting to see some progress finally. You know how that goes. You work and work and work and work…and see no progress.

Well, we are finally seeing some, woooo!

Today I have a special treat for you 🙂

Delicious Healthy Muffins

When you think muffins you’re probably thinking sweet, delicious, big cupcakes, filled with sweet goodness, just like these carrot cakes from Little Bertha. Well you’re half right, there is that kind, but there’s also an equally delicious healthy kind! Yep, healthy. These healthier alternatives are a little bit savory, a little bit sweet, all tasty.

First up, there are Apple Cinnamon Oat Bran Muffins. Apple and cinnamon are one of my favorite combinations of flavors and it’s so comforting when it’s cold and rainy outside.

Combine some oat bran, whole wheat flour, ground flax-seed, baking soda and powder, ground cinnamon, nutmeg, 1 egg, canola oil, sugar, applesauce and chopped pecan nuts for a delicious and healthy alternative to the sweeter option that your body will thank you for.

The next option is high in omega 3’s making you feel all good inside the mind – they help produce serotonin which fights depressive moodiness and irritability, and the body.The complex fibers will also help your digestive system. They consist of whole wheat flour, baking powder, baking soda, cinnamon, crushed pineapple, cubed papaya, yogurt, 1 egg, canola oil, sugar, agave syrup, walnuts and dried cranberries.

Another favorite is Banana Walnut with Yogurt Muffins. These use a body loving combination of ingredients that will digest easily, not to mention it tastes great, unlike a lot of other cardboard tasting healthy alternative recipes you might come across.

Ingredients:

  • 1 1/4 cup of oatmeal
  • 1/2 cup of rice flour
  • 1/4 cup ground flax-seed
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 2 eggs, beaten
  • 1/4 cup plain yogurt
  • 3 ripe bananas, mashed
  • 1/2 cup agave syrup
  • 1/3 cup grapeseed oil
  • 1/4 cup walnuts, roughly chopped

Method:

Preheat your oven to 180 degrees. Mix together all you dry ingredients in a large bowl (oatmeal, flour, flaxseed, baking powder and soda). In another bowl, mix together all the wet ingredients (eggs, yogurt, bananas, syrup and oil). Add the dry mixture to the wet, slowly combining and folding in walnuts.

Divide up your batter into your muffin tin (paper liners are optional). Bake for 20 minutes or until golden then leave to cool on a wire rack.

All of these recipe ideas are great options to snack on and will stop you from eating any of that nasty stuff like chips and lollies.
