Watermelon Black Bean Salsa
How was your 4th of July?! Do anything fun?
Patrick and I went up to Boston to see the “Boston Pops”, aka their firework celebration on the 4th of July.
We had some…interesting events that happened while we were up there haha.
Just to list a few:
We road the T (subway) just about wherever we went. It is convenient and cheap, so why not right?
Well whilst we were on the T, there was an older gentleman (perhaps I shouldn’t call him that, just keep reading) who was having quite a sneezing attack.
Such an attack that the majority of those sitting around him moved down a little in hopes of NOT getting some kind of random disease.
As the T forged on, the older *ahem* gentleman just happens to find an empty bag of chips wrapper on the ground. You know one of those that you get at a vending machine, the baby ones.
He then proceeds to hock a loogie into the bag…over and over and over again.
Now forgive me, but that just ain’t right.
In addition to this truly amazing sighting in Boston…
Patrick and I are getting ourselves set to go and see the fireworks, we grabbed a nice spot on the bridge that overlooks the water and the city of Boston. Perfect spot.
A few minutes after we get comfortable, this is after a girl has accused me of “checking out her man” – just a side note…honey, maybe I was looking at your man because he didn’t have any front teeth, JUST SAYIN‘! – , we are asked to get off the bridge because of lightning.
BUMMER!
So, we move down to a piece of land closer to the shore that is rather crowded with people…the fireworks start and we are in just the right spot to be behind a tree so we can’t see them haha.
To make things even more exciting, it started to downpour on us while we watched the fireworks.
Needless to say it was an adventure.
We made the best of it though! We had a good time and we got to eat at a lot of great places. Mostly seafood. If you ever get a chance to try out Legal Seafood, definitely do it. Great eats!
Anyways, since we are celebrating our country this week as well as it being summer and warm out, I thought I would share a colorful and healthy salsa that is perfect for the summer time.
Would be great at a 4th of July party! And hey, if you get stuck behind a tree where you can’t see the fireworks, at least you will be able to snack on this! 😉
Ingredients for Salsa:
- 1/4 ripe seedless watermelon
- 1 can black beans, drained
- 3 tablespoons pickled jalapenos, chopped
- 1 clove garlic
- 1 small shallot
- 1/4 red bell pepper, chopped
- 2 tablespoons fresh cilantro
- 3 fresh basil leaves, chopped
- 1 tablespoon fresh flat leaf parsley, chopped
- salt and pepper to taste
- 1 teaspoon red pepper flake
No rocket science here, just get all your ingredients ready, toss them together after you have chopped/prepared them. Taste and add seasonings to your liking.
If you don’t like things very spicy, I would decrease the red pepper flake or just not add it all together. Personally I love spicy food so this was just perfect for me.
This recipe is not only great to have as a salsa to eat with chips or veggies but it makes an awesome topper for chicken. Patrick and I had this for dinner with some chicken and a glass of white white and it was divine.
Just perfect for a summer meal!

This looks so refreshing! I need to try it out – I do a watermelon salad with cilantro, jalapenos, red onion, and cotija cheese… now I know I was missing the beans!

sounds like you had an eventful 4th, we watched our fireworks a safe distance from the house with both our dogs in the car, since our rescue is deathly afraid of fireworks…what a sweet boy.
I love the salsa, and have yet to use watermelon in one, your’s certainly looks delicious!
