Pinwheel Cookies

OK so I have been totally MIA lately. BUT there is a good reason for it. Well kinda…haha

The place I work has been going through a new system called SAP.

OH.MY.GOSH.

I had no idea how much this would absolutely stop work in its tracks but has it ever. I mean I literally spend all day spinning my tires on one simple thing. It is amazing to me!

The problem is the place I work we are soooo very centered on doing A LOT of transactions in a month and we can’t do that much volume anymore with this new system.

Really making things stressful and hard to complete what used to take me no time at all.

Anyways, on a better note…guess what Patrick and I did??

We made an offer on a house and the seller accepted it!! 😀

Not the one that I had told you about originally that needed A TON of work. That one kind of fell through and I am glad because I love this one that we found!

Which  means that we may be the proud owners of this pretty house by June 5th 2012. 😀

Can you tell that I am excited?? I keep smiling.

We got really lucky on this place. It is close to the only family we have here in CT (my parents). So that is good because I am sure being first time home buyers we will want their help and advice.

Also, this house was empty because the family relocated. We went in with a lower bid and asked them to pay for all the closing costs. We put the offer in on Saturday and figured we would probably hear sometime on Monday morning about the counter. I mean what seller wants to pay ALL the closing costs right?!

Well, we got a call from our agent and she said, “in all my years I have never had a seller not counter an offer. Congrats, they accepted!”

Whoa! Are you serious?!

The house is so cute and it has such great potential and I have no doubt that Patrick and I will be able to do great things with it.

I have a cookie recipe that I have been holding onto for a couple weeks now. I made these around Easter and then everything started getting really busy so I wasn’t able to post but now I am now!

Ingredients for Sugar Cookies:

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 tablespoons butter, softened
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg white
  • Cooking spray

Combine the first 3 ingredients in a bowl, and set aside. Beat butter at medium speed of a mixer until light and fluffy.

Gradually add sugar, beating at medium speed of a mixer until well-blended. Add vanilla and egg white, and beat well. Add flour mixture, and stir until well-blended.

Split your dough into 3 sections (I was able to do this by doubling the recipe). Then color your 2 doughs with the colors you want and leave the 3rd the natural color of the dough.

I picked purple and yellow.

Turn dough out onto wax paper and then wrap with plastic and put it in the fridge for about 2 hours or more.

Take each color of dough and roll it out until it is about 1/4″ thick. Stack the dough on top one another and then cut the edges off so that you have a nice rectangle of dough.

Start to roll the dough on itself so you start to create a log of dough. You will be able to see the fun pinwheel design as you do this.

If you want you can roll the log in sprinkles after you are done. I thought it would add a cute touch so I did this and then wrapped it up in plastic and let it sit in the refrigerator for another 2 hours.

When you are ready to bake your cookies, Preheat oven to 350°.

Slice the log into thin slices and place the cookies onto a baking sheet sprayed with cooking spray.

Bake the cookies for about 14 minutes and then let cool on a wire rack.

These were so much easier than I had originally thought they would be. My mom gave me this cool book teaching you how to do all sorts of cool designs. I cannot wait to try to make some of them.
