Whole Wheat Waffles with Strawberries

This week is Thanksgiving and I cannot tell you how excited I am. I love the holidays! Like love them. The parties, the family, the food, the snow. Just love it. I have a lot of exciting things happening in the next couple months.

Not only is it going to be Thanksgiving this week, but I am also meeting Patrick’s bother (Justin) and his wife (Lindsay) the day after the holiday. We are meeting in NYC, which should be fun. Maybe go see the Christmas tree in Rockefeller center and have a nice fancy dinner in the big apple. If you haven’t ever seen the Christmas tree in NYC, you just gotta! πŸ˜‰

Also this weekend Patrick, who is a complete sweetheart, bought tickets for my parents and I, and him too, to go see The Trans-Siberian Orchestra in Hartford. How sweet is that? So that is really exciting because I love their Christmas music. (btdubs I have already started listening to Christmas music, haha…don’t judge me!)

Then in December (for our 6 month anniversary) Patrick is taking me to see the Nutcracker in Boston, which I am SO excited about! You all know that I am a dancer so going to see the Nutcracker is just SO exciting for me. (did I mention that Patrick completely spoils me?)

AND THEN (no and then!), Patrick was nice enough to invite me to come and spend some time with his family in St. Louis right before Christmas. I will be traveling with him from the 20th-23rd to go visit with his parents, grandparents, siblings, and friends. I am excited about that because I haven’t met any of his friends yet. Hopefully I won’t disappoint!!

And last but not least, I have a performance on New Years Eve this year with my Dance Company. So we are all getting prepared for that now. It will be great so no worries Jenn!

Whew! Lots of exciting stuff!! I think that is it…oh wait! I haven’t told you about what Patrick made for me this weekend. Man…is he great or what?

My sweet lion decided that he was going to make me some waffles this weekend FROM SCRATCH. Oh yea, he was pulling out the big guns. He did a great job!! See the recipe below and leave a comment for him telling him how great he did! hehe

Ingredients for Waffles:

  • 1 cup whole-wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 cups nonfat buttermilk, (see Tip)
  • 1 large egg, separated
  • 1 tablespoon canola oil
  • 1 tablespoon vanilla extract, (optional)
  • 2 large egg whites
  • 2 tablespoons sugar

Stir whole-wheat flour, all-purpose flour, baking powder, salt and baking soda in a large bowl. Whisk buttermilk, the egg yolk, oil and vanilla (if using) in a separate bowl. Add the wet ingredients to the dry ingredients and stir with a wooden spoon just until moistened.

Beat the 3 egg whites in a grease-free mixing bowl with an electric mixer until soft peaks form. Add sugar and continue beating until stiff and glossy. Whisk one-quarter of the beaten egg whites into the batter. Fold in the remaining beaten egg whites with a rubber spatula.

Preheat a waffle iron. Brush the surface lightly with oil. Fill the waffle iron two-thirds full of batter. Cook until the waffles are crisp and golden, 5 to 6 minutes. Repeat with the remaining batter, brushing the surface with oil before cooking each batch.
