Strawberry and Apricot Stripe Cookies

I cannot believe how fast this year has been going. I mean really. Christmas is going to be here before we know it! I am trying to help my mom design a Christmas invitation. What do you all think of the following picture for an invite? Would you like to get this for an invite?

I don’t know about you but when it starts to get around this time of year all I can think about is cookies and pies and delicious food. My family always had the most amazing holiday parties that were just FILLED with great food and people. What better way to get into the spirit than to make some cookies huh?

I need to get on top of my Christmas shopping too. I have already gotten a few gifts for a few people, but I need to get on top of that! Sheesh…can you believe it? I am already mentioning Christmas shopping.

Ingredients:

  • 1/3 cup granulated sugar
  • 5 tablespoons butter, softened
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg white
  • 1 cup all purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Cooking Spray
  • 1/3 cup strawberry and apricot preserves
  • 1/2 cup powdered sugar
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon vanilla extract

Preheat oven to 375º

Beat granulated sugar and butter with a mixer at medium speed until well blended (about 5 minutes). Add 1 1/2 teaspoons vanilla and egg while. Beat well. Combine flour, cornstarch, baking powder, and salt, stirring with a whisk. Add the flour mixture to the sugar mixture until well blended. This is a pretty stiff dough so don’t think you did anything wrong if it seems more stiff than like a chocolate chip cookie dough.

Turn dough out onto a lightly floured surface. Divide dough in half and roll each portion into a 12″ log. Place logs about 3″ apart on a cookie sheet that has been sprayed with cooking spray. Form a 1/2″ deep channel down the length of each log using your index finger.

Spoon your preserves into the channels. Bake for about 20 minutes and immediately remove the logs from the baking sheet onto a cutting board. Make sure and cut these cookies while they are still warm so they do not crumble.

Take your powdered sugar, lemon juice and vanilla and whisk together. Drizzle over cooled cookies.

Makes 2 dozen cookies. 75 calories each. 🙂
