Tilapia with Pineapple Salsa
This week is supplier week at work, which means BUSY! Our company has all our suppliers come in this week for a trade show and then a golf tournament for fun and to also show our appreciation for them doing business with us. It makes for a very chaotic and choppy week. Interruptions and supplier dinners all week long haha. Needless to say, I am ready for the weekend already. Which will include MORE demo on my parents house…
This past winter when there was so much snow in New England my parents ended up having a TON of water damage from the ice on the roof. So, they are needing to tear out and replace a good portion of their house including their main living room, kitchen, office, bedroom, sewing room, and bathroom. Needless to say there is quite a bit of demo to do. We are doing a pretty decent job at getting it taken care of. We enlisted the help of my sweet wonderful guy Patrick, such a help he was. Anyways, there will be tons more of that going on this weekend I am sure.
This recipe I am sharing with you today is a great summer meal. Light, fresh, and takes no time to whip up. 20 minutes tops, even if your fish is frozen! Now that is something I can get behind when I am having a busy week. I am sure you have all had those weeks when you just want to have something that is quick and not have to eat out. This is the meal for you…oh and hey, its healthy!This whole meal is less than 300 calories (I paired this meal with a mixture of brown rice and bulgur). Hope you enjoy it!
Ingredients for Tilapia:
- 6-ounce tilapia fillet
- olive oil
- 1/2 clove fresh garlic
- freshly ground pepper to taste
Ingredients for Pineapple Salsa: (Makes 4 servings)
- 1 1/2 cups chopped fresh pineapple chunks
- 1/3 cup shallot
- 1/3 cup chopped mixed red & green bell pepper
- 1 small jalapeño pepper, seeded if you want it to be less spicy
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons rice vinegar
Heat oil in large nonstick skillet or grill pan over medium-high heat. Season fish with garlic and pepper and add to the pan. Cook for 2 minutes on each side or until fish flakes easily when tested with a fork or until your desired degree of doneness. I know I like my fish cooked different from others so cook it however you like
Combine pineapple, shallot, peppers, cilantro, and vinegar into a large bowl and stir gently. Serve this mixture on top of fish. Garnish with lime wedges if you so choose.
So pretty isn’t it? I love all the colors. Most of you know how much I enjoy the contrast of different colors in dishes 🙂 Hope you are having a good week! Wish me luck in the golf tournament this Friday for work! hehe 🙂

Your seasonings on the tilapia sound perfect! I love simply seasoned fish…especially if it’s accompanied by fruity salsa! Yours sounds awesome…it’s beautiful and I love the sound of rice vinegar, I’m sure that adds a nice touch!

I kind of miss trade shows. I got to trade them in (no pun intended, but I really couldn’t think of another expression for that) for comic conventions – which is a pretty sweet deal in in its self.
I’ve always heard salsa over tilapia is great, I just havent brought myself to try it yet. I am a texture freak and something about the two soft textures has me hesitant. This looks awesome and sounds amazing so really, I just need to tough it up.
