Patrick’s Birthday Cake

So today is Patrick’s 29th birthday!

Happy Birthday Patrick!

We are celebrating Patrick’s birthday this week. I didn’t plan anything crazy like I did last year.

Most of you who read regularly remember that I took him up to Boston for a surprise birthday weekend.

We spend the weekend going around the city to museums, art galleries and really delicious restaurants.

This year we aren’t doing anything like that.

We have a had a lot going on in the past couple weeks, you know getting engaged and all.

My family and I are taking him out to dinner this weekend to one of our favorite restaurants J. Gilberts.

By far, one of THE best places to eat I think in CT. We went there for my birthday as well.

Funny isn’t Patrick and I are exactly 1 year and 2 months apart (I am 1/19 and he is 3/19). Makes it easier to remember haha

Of course a cake!

If you ever met anyone who loved to eat cake, or just eat in general, like Patrick does send them our way. With as many groceries as we buy you would think I was feeding a family of 4…not so much.

Anyways, so I asked Patrick what kind of cake he wanted and he told me he just had to have a marble cake with chocolate frosting.

Not surprising in the least.

I didn’t want to make something too outlandish, as Patrick would be the only one eating for a few days until my Dad got back from a trip in the Midwest.

And I am still off the sweets so I couldn’t try it but it sure did smell tasty!

While I was taking pictures of the cake I totally had a photo bomber…

Here is the recipe:

 

Patrick’s Birthday Cake

A birthday cake for a special someone
Ingredients
  • Marble cake Recipe of your choice
  • 7 cups powdered sugar
  • 1 cup cocoa powder
  • 4 sticks softened butter (add salt if the butter is unsalted)
  • 4 teaspoons vanilla extract
  • 7 tablespoons nonfat buttermilk
  • 1 tablespoon water
Instructions
  1. Cook per you cake recipe instructions.
  2. I cooked my cakes in (2) square pans, but you are more than welcome to use round. Let them cool for a good 15-20 minutes outside of the cake pans before working with them.
  3. Cut the cakes in half and try to get them as even and level as possible by using a large serrated knife. There were 4 layers after this process
  4. Set the cakes aside to cool completely before icing.
  5. In a large mixer, cream butter for about 3-4 minutes until light and airy.
  6. In another bowl place powdered sugar & cocoa powder, mix together with a whisk.
  7. Add in the sugar mixture to the butter mixture one cup at a time until incorporated fully. You may have to add a bit of the liquid if the mixture gets too hard to work with.
  8. Add in the buttermilk and water. This icing should be stiff. You should be able to spread it easily, but it should keep its shape/form.
  9. Take each layer of cake and place it onto a flat, supportive surface and put icing in between each layer as glue.
  10. Ice a very thin layer over the entire structure and then decorate as you please.
  11. I took a #10 Wilton icing tip and piped dots on the outside of the cake and then smoothed one side with a flat decorating icing knife. Repeat all over cake.
  12. The cake will get a slightly crusty texture on the outside once it dries, but it will be creamy and delicious on the inside.
