Caramel Apple Cookies

Happy Thursday everyone!

Although it isnt so happy for me. I am stuck at home with a double ear infection as well as a sinus infection. Needless to say, I am not feeling the best.

I think it may have something to do with the Rugged Maniac that I completed this past weekend. My 3rd and final race down! 

However, I don’t think the ice cold pools of dirty water were good for me. Seems kind of strange that only 2 days later I came down with some pretty serious infections.

Hmmm…linked perhaps? I think so.

The race was hard and definitely physically demanding. A step above the Warrior Dash for sure. It was at a motocross, so the track was nothing but straight up and down hills.

80th in my age group

I am so happy to be done with all my races. I think I will probably do a couple next year too. Definitely will keep running as much as I can to keep in shape.

For some reason, as I get older, I just keep packing on these silly pounds…I mean I excercise everyday! Give me a break mother nature 😉

Since I am stuck at home and feeling icky, to keep myself busy I thought I would do a couple household chores and then make some cookies.

I am loving the Fall weather.

I wanted to make a cookie that makes me feel like Fall is really here. One thing that I can say that always makes me think of Fall is Caramel Apples.

Am I right?

When I was little and school had just started up again, coming home to those caramel apples my mom used to make was SUCH a treat.

To this day, I still look forward to the day when I come home and there are caramel apples to eat at home.

These cookies are a play on the traditional caramel apple. A bit easier to eat and much less clean up 😉

Ingredients for Caramel Apple Cookies:

  •  1 3/4 cup flour
  •  1/2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 6 tablespoons butter, softened (I used salted so I reduced the salt in the recipe, if you use unslated use 1/2 teapoon salt)
  • 2 teaspoons vanilla
  • 1 large egg
  • 3/4 cup sauteed apples (about 2 small fresh apples)
  • 16 small soft caramel candies, chopped 

Preheat oven to 350°

In a medium sauce pan, place your apples that have been finely chopped with  tablespoon of butter on very low heat. Allow the apples to cook until the majority of their moisture has been cooked out. Set aside to cool.

In a medium bowl, combine flour, oats, baking powder, baking soda, and salt. Whisk together and combine well.

Place your sugars and butter in a large bowl and beat together until light and fluffy. Add vanilla and egg. Beat well. Gradually add your flour mixture, beat at a low speed until just combined. Fold in apples and caramel bits.

Drop dough onto a parchment paper lined cookie sheet. They should be about 2″ apart from one another. Flatten the balls slightly with your hand.

Bake for 9-11 minutes. Let cool on the cookie sheet for about 5 minutes and then remove the cookies to cool completely on a cooling rack.

Make sure you let the cookies rest on the cookie sheets. They are gooey when they first come out of the oven so if you try to remove them, you will have a big old mess.

This recipe makes about 4 dozen cookies and they are 83 calories a piece with only 2g of fat.

These cookies are delightful and a completely wonderful treat for these brisk Fall days.

    Raven, bravo on your races! Good for you to keep in shape. Stay well. Great idea with these cookies. My girls are looking for new ideas and I’m all in favour of recipes like this that don’t require much clean-up (for Mum!)

    Wow! That’s quite an accomplishment. I don’t know if your illness is related, but I’m hoping you feel better by now. We’ve had a horrible time at work with the cold and flu bug. In the last two weeks, 10 of the 20 of us have been out of the office for at least a week. I need to make a batch of your delicious cookies. That should cheer everyone up! Feel better!

    Well for one I hope you are feeling better! The weather has been terrible lately and it’s a miracle I have survived without an infection (though probably just jinxed myself there)

    I LOVE these cookies. I just posted about how utterly excited I am that Autumn is here and apples can be obsessed over for a few months. These look delicious! 😀
