Quinoa Flakes

I have been totally neglecting my blog here. It is terrible and I owe an apology to RavieNomNoms.

My sincerest of apologies, dear friend!

My life has been hectic to say the least in the past month and I just doesn’t seem to be letting up AT ALL.

Work has been…well to put it lightly. AWFUL! SAP is literally making me want to change my career path at the moment. I am so stressed at work all the time which just makes for some really really long days. I am sure the company will get through it, but right now…it is just frustrating.

The new house, which I fall in love with more and more all the time is coming along just lovely! Patrick and I picked out the roof color we wanted this past weekend. The seller’s decided to go ahead and just take care of the roof AND let us pick the color…man…spoiled. πŸ™‚

The performance for the dance company I am involved (Eclipse Dance Company) in is this weekend!! It is calledΒ  LifeLines…any of you guys out there that are close to Hartford, CT or Springfield, MA. You should definitely come by and check it out! We have worked really hard this year and we are hoping for a great performance this Sunday at 7pm at the Exit 7 Theater in Ludlow, MA. Come out and see us!

Softball and Kickball are in full tilt now…it is summer time so every Monday and Wednesday I am playing my sports and socializing which is SO nice, but makes for some rather busy weeknights.

I also have been keeping up with my running which is great. I am averaging about 8-10 miles per week. I know that doesn’t seem like a lot, but it is a lot for me and I am proud of myself for sticking with it because for the longest time I have been afraid of running because of my ankle problems. I got myself a new pair of shoes, by Miss Stephanie over by Steph’s Bite by Bite suggestion, and I am doing great!

How was your Mother’s day btdubs?? I took my mom to get all of her vegetable and herb plants for the season. That is what I normally do for her, buy all her plants so I can mooch off of her amazing tomato and pepper plants haha.

Anyways, so that is all the fun stuff that has been going on in my life and to tell you the truth, it hasn’t left much time for me to do a lot of cooking πŸ™

If there were an icon for extreme sad face, I would use it.

Sidebar: Can I please tell you how I LOVE making fishtails with my hair these days?? Too much fun. And since I am chopping off all my hair this week for Locks of Love, I wanted to use what time I have left with my hair to do fun things :EndSidebar

So Sara over at Stories and Sweet Potatoes told me about this stuff called quinoa flakes. I had never heard of them before and I had no idea where to get them. She ever so kindly pointed me in the direction of Whole Foods. That is where I went!

If you have ever been to my blog before you know very well that I love quinoa. Love it to bits! I love having it for breakfast, lunch, or dinner!

These quinoa flakes are amazing. You can bake with them OR you can make like a cream of wheat breakfast item.

I decided to start out small and try it with my normal breakfast, which is oatmeal. OH how I love oatmeal. So that is just what I did!

Breakfast Quinoa Flakes:

  • 1/3 cup quinoa flakes, cooked to directions on package
  • 2 tablespoons crunchy peanut butter
  • 1 raw apple of your choice.

Mix it all up and you have some pretty yummy breakfast going on right there.

Putting peanut butter and apples together is one of my most favorite things to do in the world, so when I can put it in my breakfast?? HECK YES! I am all for it.

Now, these quinoa flakes aren’t quite what you would consider flakes when you hear flakes. It isn’t like bran flakes or regular cereal. More like a itty bitty tiny flake that looks like chopped up coconut.

It has a little bit of a different texture than you would expect. If you are expecting something like cream of wheat…it isn’t quite that creamy. If you are expecting something more like oatmeal…it isn’t quite that dense.

Definitely good, but hard to explain the texture. I will definitely be trying this out in baking once I get some time!!

So sorry I have been missing, but it won’t be for long.

OH!! And I will be at Disney in 11 days! WOOOOT! πŸ˜€

    LOVE the fishtails!! I just learned about those at the last dance competition… all the girls were putting them in and I got a lesson on how to make them, but mine didn’t come out so well. The girls did great though, just like you!
    Good luck with the performance! I know it will be fabulous, and Liv and I wish we could come and watch.
    And quinoa flakes… I’ve never had them. But I’m with you in that love of quinoa, so I think I need to check them out!
    And yes… 8 miles is like a marathon!! I’m totally impressed!!

      Me too Kim!! I just recently got into them, but they are so much fun. I am sure they are a hit with the younger girls πŸ™‚

      I wish you guys could come and watch as well! Maybe someday! I have talked Patrick into taking pictures at our dress rehearsal this weekend so hopefully he will have some good ones for you to see.

    Oh my goodness. you are one busy lady!! I’m old.. I can’t juggle that many balls in the air. πŸ™‚ First I’m sorry your work is so stressful… that always sucks. I think its so cool you are part of a dance company… I would love to see you perform… but I’m no where near MA. πŸ™ Way to go about your running…with all you do… it’s great you haven’t shelved it… I would have. Then again I can’t run. πŸ™‚ Fish tails are so cool…. my teen niece is obsessed with them too…. and you’re a champ for donating your hair to locks of love. Very cool!! I did that once and now my hair as a middle aged lady is always pretty short. I love the healthy breakfast too… I have to keep my eye out for quinoa flakes. Have a great week! ~ Ramona

    You have been a busy bee! I think most people are far more active in the spring and summer and there are a lot of events going on as well. Lots of events in particular to you as well! Glad to see that the new roof is underway. Also, thanks for the intro to the quinoa flakes-I will keep an eye out for those.

    I love these quinoa flakes…they are relatively easy to make (I just cook them in the microwave. They have a very unique, kind of nutty taste (I guess like quinoa) and can be made thick or thin. It has the texture of grits or cream of wheat and, like quinoa, is a great source of protein…and it’s gluten free. I have served this for friends at a brunch and they loved it. I sometimes put warmed fruit (microwaved frozen berries) in it…and it is a great treat. Highly recommended and a great deal. Also, the boxes came with a very long shelf life, but I am sure that they will be gobbled up fairly soon.

    What a great looking breakfast! I’ve never heard of quinoa flakes, but they sounds fantastic! I’ve been experimenting with cooked quino kernals for breakfast.
