Banana Spice Muffins

Man, what a tornado these past few weeks have been.

Most of you know that Patrick and I have been working to get ourselves our first house. We had our home inspection on Monday afternoon.

Overall things went pretty well, here and there things that have to be taken care of…but that is a house right?

Our major concern was that the inspector said that the roof needed to be replaced. Knowing that the seller was going to be paying all the closing costs, we knew this was going to be a battle.

We thought we would start at the beginning and send in a unsatisfactory inspection form to the sellers asking for them to pay for the new roof before closing.

And guess what?! No, not chicken butt Patrick. The seller agreed!

No negotiations, no nothing. Just OK, we will pay for the roof and the closing costs.

Making me feel like this house is meant to be. Keeping our fingers crossed that everything goes smoothly you know??

Today I am going to share with you a recipe that I found for bananas. I feel like we get bananas and then they all get to the point where I like to eat them, where they have the spots on them, and in order to get all of them eaten before they turn ready for banana bread you need to eat them in like 1 day haha.

My mom likes bananas when they are green and you can drive them through a 2X4. ICK!

So this was to use up some bananas that were a little too far gone for me taste.

Ingredients for Muffins:

  • 2 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 cup mashed ripe banana (about 2 small)
  • 2/3 cup skim milk
  • 1/3 cup low-fat buttermilk
  • 1/3 cup non-fat cottage cheese, pressed to get all the liquid out
  • 2 tablespoons vegetable oil
  • 1 tablespoon vanilla extract
  • 1 large egg white
  • 1 large egg
  • Cooking spray

Preheat oven to 400°.

Make sure to get all the moisture you can out of the cottage cheese. You don’t want any of the watery portion.

Combine first 8 ingredients in a large bowl, and make a well in center of mixture. Combine banana and next 7 ingredients (banana through egg) in a bowl, and add to flour mixture. Stir just until moist. Spoon batter into 18 muffin cups coated with cooking spray.

Bake at 400° for 18 minutes or until done. Remove from pans immediately, and cool on a wire rack.

These muffins probably have about 100 calories a piece. I changed a few ingredients to meet what I had on hand.

I know I have been slacking on my posting lately. Please forgive me! Between work and the house and softball starting along with kickball starting AND the show for my dance company coming up…I have been a litttttttle busy.
