Spicy Louisiana Tilapia Fillets with Sautéed Veggie Relish

I am here to inform you that Kristin’s wedding was a blast! She was just the prettiest bride and everything seemed to go so very smoothly for her. I am so happy for her! 😀

Patrick and I had a great time! We definitely enjoyed all the food and danced the entire night which is always a good time. I promised that I would show a picture of my dress so here it is!

I personally think the best part of my outfit was my hair…I went to get it done at my salon for the first time for a wedding. I NEVER do that, don’t ask why because I am sure I can’t give you a good reason for it haha. I had her do a messy bun type thing and I was happy with it…what do you think?

The best part about weddings is seeing everyone so happy but one thing that EVERYONE looks at is the cake, so I just had to share that as well with you all. I love looking at wedding cakes, don’t you? (I am sure the entire male audience that reads this just tuned out…err wait, was that back when I mentioned hair? hehe 😉 )

The recipe I am going to share with you is something I whipped up in a pinch because Patrick and I wanted to have fish but I had no idea what kind of fish to make. My fail safe fish is always tilapia, you can do so many things with it. So, I went to Cooking light to find something, which I allllways do. Love Cooking light! So here it is…enjoy!

Ingredients for Fish:

  • Cooking spray
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 medium sized onion
  • 3-4 small tomatoes
  • 4 (6-ounce) tilapia fillets
  • 2 tablespoons water
  • 2 teaspoons Louisiana hot sauce (any kind of hot sauce will do here really)
  • 1 1/2 teaspoons chopped fresh thyme
  • 1/2 teaspoon salt
  • 1 tablespoon butter

Heat a large skillet over medium-high heat. Coat the pan with cooking spray and add in your veggies. Sauté for about 2 minutes. Remove from your pan.

Coat pan again with cooking spray. Also coat your fish fillets. Add fish into the pan. Cook 2 minutes or until light browned and then turn the fillets over. Add tomato mixture back into the pan, spooning the mixture over and around the fillets. Cover and cook 5 minutes or until fish flakes easily when tested with a fork. Or cook the fish to the degree of doneness you desire.

While the fish cooks combine 2 tablespoons of water, hot sauce, thyme, and salt into a small bowl.

Carefully remove your fish and tomato mixture from the pan and place onto a serving platter. Wrap with foil until you are ready to serve. Reduce heat to medium and add hot sauce mixture and about a tablespoon of butter to the pan. Cook until butter melts. Spoon the butter mixture over fish and tomato mixture.

I served this with some brown rice.

With the small amount of ingredients that this fish has it had an enormous amount of flavor. I was quite pleasantly surprised. This is dish (with the rice) is only 350 calories too! Can’t beat that 🙂
