Peach and Feta Chicken Pizza
Hello my foodie friends! How are you this Thursday morning? I am certainly doing better than I was yesterday. I dropped my car off at a shop to get repaired after my accident that I had this week. What a bummer! I am glad that my car will be getting fixed though. I pretty much love my car (2008 Ford Escape XLT V6, vroom vroom!) so having it get fixed is going to be the highlight of my week next week.
It is always so hard to not have a car you know? I am lucky that I have an extra car that I can drive around. I had a Ford pickup before I got my Escape which I gave to my parents, so I will just use that until my Bella (yes, my car has a name haha) is fixed.
The recipe I am sharing with you today is a little different. It is a pizza that I saw as I was going through some recipes to try and use up the peaches that I have sitting in my fridge. I was intrigued when I came across the recipe for Peach and Gorgonzola cheese Pizza. I thought to myself, that certainly would be interesting…what the heck, why not try it right?
I made 2 pizzas last night JUST in case the peach turned out to be a complete fail, which it certainly was not. I made the classic Margherita pizza, one of my absolute favorites. I mean how can you not like it?? Tomatoes, cheese, and basil…you just can’t lose! As you can see Patrick was rather excited about the pizzas before they even went into the oven. Sometimes he is like a little kid (which I love about him), and you have to tell him, “go sit down and just watch”, haha.
Anyways, you have heard me ramble on for long enough now…onto the pizza, shall we?

Ingredients for Pizza:
- 1 prebaked thin wheat pizza crust
- Cooking Spray
- 1 teaspoon extra virgin olive oil
- 1/2 cup shredded part-skim low moisture mozzarella cheese, divided
- 1 cup shredded cooked chicken breast
- 1/3 cup crumbled feta cheese
- 3 tablespoons finely chopped purple onion
- 1 medium peeled peach, thinly sliced
- 1/3 cup balsamic vinegar
Preheat oven to 400º
Place pizza on a pizza pan or baking sheet that is coated with cooking spray. Brush the olive oil evenly over the crust. Sprinkle 1/4 cup of the shredded mozzarella on crust and top with the purple onion.Layer the chicken, feta, and peach slices however you like. I put the chicken down first then the peaches and finally the feta. Top with the remaining 1/4 cup of shredded cheese.
Bake for 20 minutes or until crust browns.
Place vinegar in a small saucepan over medium-high heat. Cook until reduced to 2 tablespoons, approximately 5-8 minutes. Mine took about 8. Drizzle the balsamic reduction over pizza when finished baking.
For 2 slices: 384 calories, 12.5g Fat, 4.9g Sat Fat
I was pleasantly surprised at how well all the ingredients went together. The peach was very subtle but definitely and interesting and delicious addition. I personally think I could just have the peaches, the reduction and feta in a bowl and be a completely happy camper hehe 😉

Great idea! People make fig pizzas all the time – why not peach? I make peach caprese. It’s interesting that peaches seem be be able to replace tomatoes quite often.

Ahh just yesterday I was wondering…what kind of homemade pizza should I make this week? This one sounds amazing…I’m a big fan of adding fruit to pizza and I’ve never thought about this combo before.
