Snickerdoodles

In 2 days I will be walking 60 miles for breast cancer in Boston…AH!!! I cannot believe it is already here! Amazing to me how fast time flies. I seriously feel like I was just telling you all about the great event and how I need to raise money and now it is less than a week until I actually do it! Mind boggling people…

I am so very excited for the walk though! It is such a great cause and I am so glad that I decided to take on this challenge. 60 miles in 3 days…whew! Going to be a challenge indeed! Not to mention the weather in New England has been a liiiiiiitle steamy as of late. Take a look at the forecast for this weekend in Boston…

HOT! HOT! on Friday and Saturday and then a break on Sunday. However, it doesn’t appear that there is going to be any rain (woot woot!), which I think I prefer. I would rather have it be hot than have it be rainy for 60 miles, just sayin’ 😉

So, this weekend while you are making all of your yummy treats for me to come back and look at when I am done with the walk, think about me and wish me luck on my journey! I am sure I will have all sorts of pictures to share when I get back.

Onto the main event…cookies!!! I don’t think I could ever get tired of making cookies…they are so simple and people just seem to love them so much. Hope you enjoy this super simple recipe for Snickerdoodles!

Ingredients for Snickerdoodles:

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cup all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon

Preheat your oven to 400º.

Cream together butter, shortening, sugar, eggs, and vanilla. Blend in the flour, cream of tartar, baking soda, and salt. Shape your dough by rounded spoonfuls into balls.

Mix the 2 tablespoons sugar and cinnamon together. Roll the balls of dough in the mixture and coat completely. Place the dough 2″ apart on an ungreased baking sheet.

Bake for about 8 or 9 minutes, or until the cookie is set, but not hard. Remove immediately from baking sheets and let cool on a wire rack.

This recipe yields about 48 cookies.

This is one of the better Snickerdoodle recipes I have tried. I think this one is a keeper. Highly recommend this if you are looking for a cookie that isn’t the standard chocolate chip!
