Egg Rolls

Hello my dears! I trust you all had a good weekend. Mine was full of resting up from my long week of traveling. AND the time change has me all messed up. I really think that it is harder for me to sleep when I know the time is changing. Not sure why…a weird quirk or something haha 😉

This weekend was my first attempt at Egg Rolls and let me tell you….they turned out FAN-EGGyROLL-TASTIC! I really had no idea what to expect because I have never made them before. Honestly? I am not even sure what possessed me to make them. But, holy NomNoms, they were so yummy. That is all we ended up eating was the egg rolls! I was going to make sesame chicken (which I probably will at a later date), but we got so full from the egg rolls we just stuck with them. hehe

Ingredients for Egg Rolls:

  • 2 tablespoons sesame oil
  • 2 tablespoons canola oil
  • 1/2 head green cabbage, shredded
  • 1 cup julienne carrots
  • 1 cup julienne snow peas
  • 1 1/2  tablespoon corn starch
  • 1/3 cup soy sauce
  • 1 package Egg roll wrappers
  • Peanut oil, for frying

Directions:

In a skillet over medium- high heat. Heat the sesame oil and canola oil. Saute cabbage for about 2 minutes. Add carrots and snow peas. Cook an additional 2-3 minutes.

Whisk together cornstarch and soy sauce until smooth. Add this to the vegetable mixture. Cook until sauce comes to a boil and is slightly thickened, took about 2 minutes. Remove from the heat and let mixture cool.

*don’t you just love this tiny little whisk? haha*

Lay the egg roll skins on a flat surface and lightly brush edges with water. Place some of the filling at one end of each skin, leaving 1/4″ border at the top and sides. Roll wrapper over the filling, tucking in the ends after the first roll. While you are doing this heat 3″ of peanut oil  in deep saucepan. The oil needs to be around 350º.

Tada!

Drop the egg rolls into hot oil and cook until golden brown. This was only about 2-3 minutes. Place on paper towels to drain excess oil. Serve with your favorite sauces (mine would be hot mustard, yuuumm)

They were so great! Like I said it was a complete meal for me! Have a great week everyone!
