Kabobs

Love summer time! Summer time to me is so much fun, not just for the sun and vacations…but for the grill! I find that if I am ever in doubt as to what I should make for dinner…I head for the grill. You can make some of the best food on the grill….although I have to admit I have had some mishaps. Like, for example, the first time I tried to make pizza on the grill. Let’s just say the people at the grocery store saw me twice in one day, one hour apart. πŸ˜›

Anyways, I wanted to make something on the grill and kabobs are always a good choice. Especially when you have fresh ingredients from your garden πŸ™‚

I made vegetable, chicken, and steak kabobs, tomato salad, and my helper made homemade rice. I hope you enjoy!

Ingredients for veggie kabobs:

1 squash

1 zucchini

3 tomatoes

8 ounces mushrooms

1 green bell pepper

1 red bell pepper

3 tablespoons olive oil

2 tablespoons balsamic vinegar

3 cloves garlic

3-4 basil leaves

2 sprigs of thyme

1 lime

1 teaspoon kosher salt

1 teaspoon red pepper flake

1 teaspoon pepper

Ingredients for meat kabobs:

2 chicken breasts

2 steak tenderloin

KC dry rub

1 tablespoon olive oil

This is a Kansas City rub that is really meant for pork, but honestly can be used on any meat. I also find that when I do kabobs it is so much easier to cut the meat when it is still frozen (if you get your meat from your storage – which I did)

Cherry lemonade, ginger ale, sugar rim, lime, vodka….ahhh……

OK…back to work

This is my helper…..he made the fried rice, which was ah-mazing πŸ™‚

This is tomato salad..the recipe for this will be posted at another time. It is so heavenly! I cannot even describe to you how good this is.
