Cucumber & Sour Cream Salad

This one of my favorite recipes…has been for a really long time. My mother taught me to how to make it and her grandmother taught her how to make it. I know that many people have probably heard of it, eaten it, made it…but it is a family tradition that I wanted to share so others could maybe do that same with their family.

Ingredients:

2-3 small cucumbers

1/2 cup of light sour cream (cannot really use non-fat for this it has too much liquid)

1 teaspoon pepper

1 tablespoon dill

1 teaspoon kosher salt

I like to peel my cucumbers when I make this salad, but it completely up to the cook whether or not they would like to keep the skin or not..

  

Once you have peeled the cucumbers…thinnly slice them

Place cucumbers in medium size bowl and put kosher salt on them and toss with a spoon. This will help to get the additional moisture out of the cucumbers.

Let the cucumbers sit with salt for about 10 mins and let the water drain to bottom.

While cucumbers are sitting in salt, place sour cream in small bowl and whip with spoon until creamy.

   

Run cold water over cucumbers and strain to remove the remaining kosher salt.

  

Dry out cucumbers along with medium sized bowl. Place cucumbers back into bowl and put pepper and dill on dry cucumbers.

  

Stir and put whipped sour cream into cucmber mixture.
