Garden Fresh…

On top of everything else I do…I enjoy working out. I really try my hardest to work out 3 times a week (on top of playing softball in an adult league, which I do 2 times a week). So, a lot of times I really would rather just go to the gym right from work…that way I don’t get settled at home and then not go at all! haha 😉

Anyways, so after my intense cardio session this evening I came home wanting something light. Then remembered…”hey! I have a ton of fresh veggies in my garden!”….BINGO!

I made a salad this evening with all fresh ingredients right from my garden and I must say, it was quite fabulous…

started off with chopping some romaine lettuce and green bell peppers….

::thinks to self as she walks around the garden:: Hmm…what else do I have in this garden?? aaaaHA!

chopped some cucumbers and carrots as well…

During the break here, I grabbed:

2 small tomatoes (quartered)

a hand full of cashews

1 tablespoon of shredded Parmesan cheese

Pepper vinaigrette dressing

yeaaa…..now we are talking

Threw the cashews on top…..for an extra crunch (and protein!) I love having nuts on my salads they add that crunch you need without the carbs (NOT that I am a carb watcher…but sometimes it is nice to pay attention)

Drizzled the dressing on top of the salad….

and enjoyed…..

Now this is what I call Nom Noms!

That was my meal for the evening and the only thing to make it that much better was my bunny, Gizzy, sitting next to me saying to himself, “Man, that looks like a great salad for a rabbit…Hey ma, give a guy some love here”….
