Zucchini Brownies w/ Dark Chocolate Frosting

It is August. AUGUST!

I mean good lord, where has this year gone!? Granted, I have been pretty busy. But still.

Patrick and I have been working like crazy people to try and get our house ready for people to come and stay in for the wedding that is 82 days away…eeeeeee!

Yikers.

One of our bathrooms is completely torn up at the moment. Down to the studs. Always something isn’t it?

I am glad we are doing it, because quite frankly we had some SERIOUS electrical hazards behind our walls. In just about every room we have touched.

Thank goodness my Dad and Patrick know to how fix these things.

This past weekend my Mom and I worked on a project that to me, makes me feel so much better it is done. The kitchen table and chairs are finally done! WOO!

The table looked the same as the chairs, brown and just plain! Super happy with the way it turned out. My kitchen now has a table to EAT at! haha

Speaking of my Mom. She has some baseball bats for zucchini right now, so she has been giving them to Patrick and I to put into breads and things like that.

I wanted to try something a little different with one of the zucchinis. I looked for a recipe and found these Zucchini Brownies…

It was also my first experience with Swerve Sweeteners and oh my gosh, I was so pleasantly surprised. I got the granular and the confectioners style. I am telling you, you cannot tell its not made with regular sugar. (this was something I did on my own, I am not advertising for Swerve or anything like that. Just saying I tried it and had amazing luck!)

Anyway, so I got this recipe and I wanted to change it up a bit because that is what I do.

You could definitely change up this recipe to fit in more with your goals as well. For example, you can change the oil in the recipe to fit your needs. I put in 3 different suggestions.

Also, if you don’t mind using all purpose flour, you can use that as well. OR if you like whole wheat flour, you can definitely use that. There needs to be about 2 cups of some sort of flour in this recipe.

For me, I used 1 cup oat flour (took old fashioned oats and used a food processor to make flour) and 1 cup of protein powder. I know a lot of you don’t use protein powders. So again, use what you like!

It will turn out great!

These were so simple to make and I loved that it used vegetables too! I am a huge fan of putting zucchini in things. Patrick on the other hand is harder to convince.

If it is in bread? If it has chocolate? He is all about the zucchini. If you grill it? Make it into pasta? Or cook it in a pan with other veggies? Forget it. He will pick around it and make sure he doesn’t get one taste of it.

Sigh. He is a hard one to cook for. BUT, if it is sweet? He will most likely eat it.

However, I enjoy nuts and he hates them. (what am I getting myself into with this marriage??)

So I only put nuts on half of brownies. Seriously…he is spoiled.

Anyways, I hope you enjoy these brownies as much as we have. They are moist, chocolatey and super nommy for only having 100 calories a piece!

Zucchini Brownies w/ Dark Chocolate Frosting

Ingredients
  • 2 cups chopped raw zucchini
  • 1/4 cup melted butter (can use coconut oil, or olive oil)
  • 8 oz Non-fat Plain Greek Yogurt
  • 1-1/4 cups Swerve granular
  • 1 tablespoon vanilla extract
  • 1 cup oat flour
  • 4 scoops Chocolate Protein Powder
  • 1/2 cup Cocoa
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • [b]FROSTING:[/b]
  • 1 cup semisweet or bittersweet chocolate chips
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons butter (can use coconut oil, or olive oil)
  • 1/2 teaspoon vanilla
  • 1 cup Swerve Confection Style
  • 1/2 cup chopped pecans or walnuts or whatever nut you like (optional)
Instructions
  1. Preheat oven to 350°F
  2. Spray a 9×13″ pan with nonstick spray.
  3. In a blender or food processor puree zucchini, butter/oil, yogurt and vanilla. It should be smooth and liquid-y. Set this aside
  4. In a mixer place all your dry ingredients and mix together until well combined. Add in your wet ingredients and then pour into your greased pan (I threw a couple extra chocolate chips in the batter here).
  5. Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs. You don’t want to over cook them. Let cool for about 30 minutes.
  6. [i]For Frosting:[/i]
  7. Microwave the chocolate and butter/oil and stir until smooth. Add in vanilla and confectioners sugar. Mix until well combined. Set aside
  8. You want to frost the brownies while still warm, but not hot. I place a fork into the brownies an made holes in the top to let some of the frosting seep inside (this step is not necessary).
  9. Frost brownies and then place nuts on top (I made mine so that half had them and half did not since I have a nut hater in my house)
