Zucchini Pizza Boats
End of summer… Means creative summer dishes. But first, how the heck is it already September? How did that happen? It seems like yesterday we were all watching the TV and social media to see what would unfold with Covid and the month of March was PAINFUL… and then all of a sudden… It is September. How’s that happen? I hope you are all hanging in there. I have felt extra isolated lately. I feel like I am ready for a little bit of normalcy in my life. Maybe not the returning back to the office part, at least not full weeks. I like working from home. However, being someone…

Quinoa Pizza Crust
I am always looking for ways to have pizza and not do too much damage to my waistline. The hubs practically lived on pizza before we met, so I do my best to try and make it for him every once in a while. We eat cauliflower crust pizza at my house probably once a week because it is easy to make and great for you, but it doesn’t have the same “crunch” as normal pizza does. You know what I am talking about… The crust crunch you get when you go into a townie pizza parlor and the crust smells and tastes like it as made of angel wings.…

Cauliflower Crust Chicken Taco Pizza
Ok, first I must apologize for my terrible pictures in this post. I am a bad foodie… BUT, I made this after my workout last night and I was starving, I was so hungry that I couldn’t wait to eat it so I just used my phone. Errr, I meeean…the bunny stole my camera and I had to use my phone… Don’t judge me. I have been wanting to try this recipe for Cauliflower Crust from Laura at Sprint2theTable, for like ever. Right Laura? I have been saying for MONTHS, I was going to make it. Went over to Laura’s site, found the ingredients was like oooohhh shoot, no idea…

Peach and Feta Chicken Pizza
Hello my foodie friends! How are you this Thursday morning? I am certainly doing better than I was yesterday. I dropped my car off at a shop to get repaired after my accident that I had this week. What a bummer! I am glad that my car will be getting fixed though. I pretty much love my car (2008 Ford Escape XLT V6, vroom vroom!) so having it get fixed is going to be the highlight of my week next week. It is always so hard to not have a car you know? I am lucky that I have an extra car that I can drive around. I had a…

Happy Monday all! I hope you all had a fabulous weekend. The weather here was so gorgeous, I think Spring may finally be upon us. It was sunny and 70 both days of the weekend and it was truly glorious. Now in true Spring tradition it is supposed to rain the *entire* week :-(. Ah well, at least the weekend was nice and now that I have to be stuck inside for work it will be rainy. Don’t forget to stop by Becky’ s Bake Sale today and check out all the goodies that she has. Everything looks SOOOO yummy!!! Head on over and check it out and make a…

Pizza with a Stone
Wellll helllooooo! I have been totally MIA for the past couple days, almost week actually. Holidays are crazy and time just seems to slip right on by me when the holidays are near (or here)! I was able to spend time with loved ones and friends during the holidays and the best part was, I was able to…SLEEP IN! I love to sleep…I was so happy to be able to sleep in past 6am and to not have to hear and alarm clock for 4 days straight. Oh what joy that was for me…so nice. I say all the time that it must be awesome to be a cat because…
