Kung Pao Chicken
TGIF!! Any big plans this weekend? I have the cooking class, other than that just lots of working out trying to get more in shape for my trip to Disney in May.
Yup that’s right! I am going to Disney!!
I have never been. My brother went a couple times but I wasn’t ever taken. I think my grandparents on my Mom’s side liked him better as a child haha. He went like 2 or 3 times and I never got to go.
Well you know what?! I AM GOING NOW!
The girls I play softball with got a timeshare down there for an entire week around Memorial day so there are a bunch of us going, we are also getting 4 day passes to Disney and then spend a couple days on the beach. Holy cow am I looking forward to that.
We are staying at the Wyndham Cypress Palms Resort is Kissimme, FL. Ok, now who wouldn’t want to spend a couple days in the sun (Patrick you don’t count)?
I am seriously counting down the days until we go. It was a really affordable trip that I feel will be well worth every dime we spend. I mean, it’s DISNEY for goodnessakes!

This recipe I am sharing with you today packs some heat! I was a little surprised at how spicy this was. It was very very tasty, but if you don’t like spicy meals I would reduce the red pepper flake.

Ingredients:
- 4-5 drops dark sesame oil
- 1 1/2 tablespoons mixed sesame oil
- 1 cup chopped onion
- 2 garlic cloves, minced
- 1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
- 3/4 cup water
- 3 tablespoons lower-sodium soy sauce
- 2 teaspoons cornstarch
- 1 teaspoon brown sugar
- 1 tablespoon fresh minced ginger
- 1 1/2 teaspoons crushed red pepper
- 1 cup thinly sliced red bell pepper
- 1 cup carrots chopped into coins
- 1 cup snow peas, trimmed
Heat sesame oils in a large skillet over medium-high heat. Add onion to pan and sauté until softened. Add garlic and sauté stirring constantly. Add chicken sauté until chicken begins to brown.
Combine 3/4 cup water and the next 5 ingredients (through crushed red pepper), stirring with a whisk until sugar dissolves. Add water mixture to pan and bring to a boil. Add bell pepper, snow peas, and carrots to pan. Cook for 2 minutes or until vegetables are crisp-tender and sauce thickens.
I served this with rice noodles. You can also serve this with rice or just by itself really! I am sure it would be good either way.
Super easy right? and guess what (no, not chicken butt Patrick)?? This recipe is only 275 calories, 13.8g of fat (2.6g sat fat). Those counts are per a 1 cup serving. That is a great dinner to me!
I know you are all shocked that this is lower calorie and fat, because I NEVER do that 😉
Now to me the best way to finish a dinner called Kung Pao Chicken is to have a fortune cookie…I hope your fortune is a good one!

I still remember my first trip to Disney – I was way more excited than my kids were! My advice, buy one of those cheap $1 ponchos and throw it in your purse. At around 4:00 this time of year it rains almost every day for like 20 minutes and you’ll get drenched if you don’t!

I never had an interest to make kung pow chicken but your chicken and noodles look incredibly delicious. Those peas really seal the deal for me. I think I might just have to have this for myself!

Going to Disney for the first time is always a great experience and I’m sure you will have an amazing time! Make sure you get around to all the parks. Epcot is always my fave, but Magic Kingdom is where all the real classic Disney rides are!
This Kung Pao chicken looks great! I order it often when we order Chinese, but I would love to try making it myself!
