Football Cookies
How was your Superbowl Sunday? Did your team win? I wasn’t really partial to either one of the teams. I don’t care for Brady or Eli all that much. Truly, I was hoping to see the Packers in the Superbowl. Not that they are a team I follow closely, but I thought they deserved it.
I am a Chiefs and Steelers fan, so both of my teams were gone long before the Superbowl. Although my Chiefs did win against the Packers so that was exciting. Not that it had any kind of bearing on the Packers at all, but delivering their first lost was definitely a proud moment for my team haha.
In other news, it is official…Patrick and I live together!! π
We got everything out of his apartment with our helpers and got everything where it needed to be. We have been organizing things since Saturday which has been good. I will be glad when it is all over and everything is in its place.
Although through all the moving and running around I have come down with a rather bad case of an ear infection. I used to get them ALL the time when I was little, and when I say all the time I mean ALL the damn time.
It got to the point where they were going to put tubes in my ears as a kid, but then the infections just starting clearing up so I didn’t need to have it done.
I started feeling kinda icky at the end of last week and then once we were in the cold with moving things around I don’t think that helped. Being the sweetheart that Patrick is, he ran me over to Target on Friday to get some ear drops.
Unfortunately, those drops seems to make things worse…weird I thought. I looked at the label and saw that it had an ingredient that I am allergic too. Silly me never checking the labels. I should really do that more often! Since I am an adult now and everything (when did that happen, like forserious?!)
So again, being the sweetheart that Patrick is he runs me out to CVS to see if we kind find drops that I won’t be allergic too. No dice.
Then, I start getting hives and my tongue started to get swollen. YIKES! It was quite an adventure. We didn’t end up finding any other drops to help out and we probably should have taken me to the emergency room haha, but everything ended up being OK.
Except for I still have that silly earache :-(. Hoping it will work itself out this week. Send some positive vibes my way!
Anyways, today I am sharing my football cookies with you that I made for the Superbowl. I hope you enjoy them!
Ingredients for Cookies:
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 stick plus 2 tablespoons unsalted butter (room temp)
- 1 cup sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon pure vanilla extract
Cream butter for 1 minute and add your sugar. Beat that mixture until it is light and pale.
Add egg and egg yolk and beat for another few minutes and then add vanilla.
Reduce the mixture to low speed and steadily add in the flour mixture (baking powder, salt, flour). Stop the mixer before all the flour is blended into the dough and finish the mixing with a rubber spatula.
Take the dough from the mixture and place on your counter. Divide the dough in half.
Wrap the 2 sections in plastic wrap and place in refrigerator. Cool for at least 2 hours.
Ingredients for Icing:
- 4 cups powdered sugar
- 2 tablespoons meringue powder
- 6 tablespoons water
- 1/2 teaspoon pure vanilla extract
Add the sugar and meringue powder together and mix until combined in mixture. I would advise sifting the sugar at least 2 times before you begin.
Add water and vanilla and beat for 10 minutes or until the icing has lost its shine.
I piped the outline of the cookies first and then let them set and then flooded the cookies by adding water into the icing so it becomes a little runny.
When I first read this recipe I was really scared to do the icing and flooding, but it really isn’t as scary as it seems. Now…it is one of my most favorite ways to make cookies in the shape of different things. The recipe is full proof and turns out the same every time!
To me it is always nice to have a recipe you can rely on. This is mine.
These were the perfect little treat for the Football party. I mean who doesn’t love little football cookies?

Your earache might have been caused by the temp change from going in and out. I sure hope you are feeling better, allergies are never a help when you are looking for over the counter medicine.

Youch, hope you’re feeling better soonest! FYI, my youngest used to get ear infections all. the. time. AND she’s allergic to all but one antibiotic… swelling tongue is symptomatic of anaphylaxis, so yeah, ER would have been a good move. Be really careful of that ingredient again, because allergic reactions escalate rapidly. Per the pediatrician – keep Benadryl around and use immediately at sign of allergic reaction, but don’t *ever* ignore those allergic reaction signs. Anaphylaxis kills. Seriously.
