Turkey Panini with Thyme Mayo

I am 26 today! OH MY GOODNESS! Where on earth did the time go?? I definitely do not feel 26 that is for sure, well I take that back…sometimes after I work out or after dance rehearsal I feel like I am 26slash50. hehe πŸ˜‰

This past Christmas I got a panini maker in a Yankee Swap that happens every year. If you have never had a Yankee Swap, consider doing it with your family next Christmas. It is so much fun and everyone ends up having such a nice time AND you normally get some pretty awesome loot! Anyways, so because I got this awesome panini maker I wanted to try it out. I am a BIG sandwich girl, I love having sandwiches. There are just infinite possibilities as to what kind you can have (thanks for my new “sandwiches” cookbook that you got me for my birthday Mom!).

First, what I wanted to do was make a spread for the sandwich because I do love having that on my sandwiches. Note: I am not normally a mayo girl. I would much prefer a mustard or pesto but this was a mayo kinda day, so I ran with it!

Ingredients for Spread:

  • Low-fat Mayo
  • Thyme
  • Parsley
  • Garlic
  • Pepper

All you do is just mix all your ingredients together in a small bowl and Viola! a spread for your sandwich!

Ingredients for Panini:

  • Turkey breast
  • Tomato
  • Provolone
  • Roasted Red Peppers
  • Fresh bread – I used Sourdough but you can use whatever you like

Take your bread and lay out the slices on a flat surface and spray on side of each piece of bread with cooking spray. This will help later on when you put the sandwich into the panini maker, helps it to not stick. Spread your mayo on each piece. Lay a piece of provolone on each slice as well, yea that’s right EACH SLICE! haha, I love cheese!

Then place your tomatoes on your sandwiches but only on one side of the sandwich. Layer your turkey on top of that and then add your sliced roasted red peppers.

How simple and awesome does that look?! I am so in love with roasted red peppers, I just love the flavor that they bring to a sandwich! YUM! Place the remaining slices on top of the layered sandwiches and put them into the panini maker. Cook the sandwiches until the outside browns and the cheese starts to melt.


All that is needed now is a fresh crisp dill pickle and chips of your liking, or in my case some veggies and you are all set! I just love all the different kinds of variations you can make when it comes to sandwiches. I mean you can even make dessert sandwiches! I think that will be my next adventure haha πŸ˜‰
