St. Patty’s Green Mint Smoothie

I really haven’t done much celebrating for St. Patty’s Day since I was in college, which is a-ok with me.
Patrick and I are off to St. Louis this weekend for a wedding. Which should be great! His birthday is on the 19th so I am glad we are going to be able to go and celebrate with his family and friends.
I am sharing a smoothie today.
I have been on a smoothie kick lately! I have had so many of them!
They are a great way to get in vitamins and nutrients that your body needs.
I have been using veggies in my smoothies/juices as well. Don’t get too scared haha, they are delicious.
Kind of like this smoothie today. It is greeeeeeen!
You know how it got green? It has spinach and mint leaves! YUP.
Before you get all weird about it….spinach has no taste in a smoothie. It doesn’t. I don’t care how many people argue about it, it has zero taste when it put it with other things.
Especially bananas.
This smoothie is packed with healthy protein, fiber and sugars! Sugar isn’t the enemy when it comes from fruit.
Side note: seriously people stop being weird about fruit. It is good for you!
Enjoy this smoothie with some chocolate on top of your choice.
I was pleasantly surprised by the mix of banana and mint. I was a little skeptical at first, but it is so tasty!
Enjoy your St. Patty’s Day everyone and your Monday as well!
- 2 cups Spinach
- 1/4 Cup fresh mint
- 2 bananas
- 1/4 cup nonfat Greek yogurt
- 1/4 cup unsweetened vanilla almond milk
- 3 drops vanilla Stevia
- 1/2 teaspoon pure mint extract
- 1/2 cup ice
- Garnish with cocoa nibs and mint leaves
- Put everything in a blender and enjoy!
