Carrot Bread

Do you have a show that you love to watch on TV?

I am rarely home to watch TV let alone get obsessed with one. Back when LOST was still on, I was an absolute maniac about that show.

I started watching it in college and my love affair with that show continued for its entire duration. After LOST went off the air, I really didn’t have anything that I raced home to watch or that I was really upset that I missed.

I have friends that are fans of The Bachelor and other reality TV shows like that. I have really never gotten into them. To tell you the truth I think TV has gone WAY downhill over the years.

Sidebar. Remember that dude that used to paint on the local PBS station? He was always talking about trees, mountains, colors, and had some craaaazzzy hair? I am pretty sure his name was Bob Ross and I am pretty sure his fro will go in history as one of the best. End Sidebar.

Just recently I started watching Downtown Abbey, which I love love love! But, the next season for that show won’t be around until next year, ahhhhh! Talk about suspense. Mary and Mathew just got engaged and then BAM, Season 3 hasn’t been made yet. What a bummer. So that is kinda out for now haha.

I do however have secret about TV to tell you…about something I watch and get strange enjoyment out of…about a show that is about people completely humiliating themselves on national television and me loving every second.

Ever seen Worst Cooks in America on the Food Network? It is my guilty pleasure. They show the new episodes on Sunday nights.

This.show.cracks.me.up.

These people who literally make some of the worst looking food I have ever seen (and think they are awesome, btdubs). They make such strange mistakes in the kitchen that leave you cringing, laughing, and screaming at the television set. For example, I am pretty sure I saw Kelly (who is now one of 2 finalists for the finale) put about 5 tablespoons of salt on potatoes because “Chef Ann likes salt”. ::insert confused face::

For a Foodie, this is reality TV that I can get into. You learn a little from the veteran chefs (Anne Burrell & Bobby Flay), you see new recipes, get inspired to try your own spin on the recipes, and laugh your tush off at people setting things on fire.

The people on the show always get so confused about what the chefs are trying to have them make. They taste things and can’t figure out what ingredients the chefs used.

Pretty positive my recipe today would have thrown them for a loop. Shaped like a cake but tastes like whaaaaat??

Adapted from Cooking Light’s Recipe here.

Ingredients for Carrot Bread:

  • 3/4 cup sliced carrot (about 6 ounces)
  • 1 1/2 cups whole wheat flour
  • 1 11/2 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1 tablespoon toasted wheat germ
  • 1 tablespoon milled flax seed
  • 2/3 cup sugar
  • 1/4 cup canola oil
  • 1/4 cup lemon fat-free yogurt
  • 1 large egg
  • 1 large egg white
  • Cooking Spray

Preheat oven to 350ΒΊ.

Cook peeled and sliced carrot in boiling water for about 15 minutes or until tender. Drain them and place carrot in a food processor until you get the desired consistency. I wanted to be able to tell I was eating carrot bread, so I left the chunks a little larger than the recipe called for.

Put flour, cinnamon, salt, baking soda, baking powder, nutmeg, and ground ginger, wheat germ, and flax seed in a large bowl. Whisk together to combine.

Combine carrot, sugar, oil, yogurt, egg, and egg white in a small bowl. Whisk together until well combined. Pour the wet ingredients into the dry and combine just until wet.

Pour batter into the pan you choose. The recipe called for a 8″ loaf pan. I went with a mini bundt-cake pan. Made 6 loaves.

Depending on the pan you choose you need to adjust your cook time. My mini loaves took about 25 minutes. The 8″ loaf pan will take about 50 minutes.

Don’t be fooled, this may look like a little bundt cake, but it doesn’t taste like cake. Definitely a savory bread. It is kind of like any other bread you make with zucchini or squash or banana. The carrot just adds a nice color and moisture to the bread.

Definitely a make again!
