Turk-loaf-ey with Traditional Topping

How was your weekend?? Mine was good. Pretty low key. Had rehearsal on Saturday night, which was good. We are getting ready for our Spring show for the dance company I am in.
Should be a good one I think :-). I like all the pieces Jenn has picked so that always makes it easier. I just hope I life up to her expectations!
I have been so busy at work, I have been super distracted, which has made my focus less than desirable. I had the “emergency phone” for the month of February which meant that I was on call 24/7 for work.
It was amazing how stressed that made me just having to carry that phone and answer at any time of the day or night to deal with customer problems.
I am SO glad that I was able to give it up this month and that I don’t have to deal with it anymore. Definitely a weight lifted!
Since I was so stressed during that time, I wanted to make a comforting meal. What is better when your stressed than a good home cooked meal?
I found this recipe for turkey meatloaf on Cooking Light and I thought it would have the comfort of regular meatloaf, but not pack on the same amount of fat and calories. A comforting meal with less calories!
Now that is definitely a stress relief!

Ingredients:
- 1 tablespoon butter
- 2 cups chopped onion
- 8 ounces of mixed color bell peppers
- 3 garlic cloves, chopped
- 3/4 cup panko (I would use 1 cup, the mix was a bit wet)
- 1/4 cup fat-free, less-sodium chicken broth
- 3 tablespoons chopped fresh flat-leaf parsley
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon Sriracha (this wasn’t nearly spicy enough for me, I would add more next time)
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 pounds ground turkey breast (all white meat)
- 1 large egg, lightly beaten
- Cooking spray
- 1/2 cup ketchup
- 1 tablespoon brown sugar
- 1/8 teaspoon dry mustard
- 1/8 teaspoon ground nutmeg
Preheat oven to 350°.
Melt butter in a large nonstick skillet over medium heat. Add onion, mushrooms, and garlic to pan; cook 8 minutes, stirring occasionally. Remove from heat; cool 5 minutes.
Combine mushroom mixture, panko, and next 8 ingredients (through egg) in a large bowl; stir well to combine. Shape turkey mixture into a 9 x 5–inch rectangle on a broiler pan coated with cooking spray.
Combine ketchup, brown sugar, mustard, and nutmeg in a small bowl, stirring with a whisk. Spread ketchup mixture evenly over top of meat loaf; bake for 40 minutes or until a thermometer registers 160°. Let stand for 10 minutes before serving.
2 slices is 187 calories!! Only 3.7 grams of fat (1.6g saturated fat, 15g of carbs, 23.2g protein)

I am glad! I was concerned my Dad would curl his nose up at it being the meat loving man he was. He gladly ate it along with leftover meatloaf sandwiches the next day! 😉

I know that ground turkey can be bland and it does require some dressing up in the flavor department. However, it looks like you really pulled it off with all these wonderful ingredients! Takes turkey to a whole new level. So glad you are not on call anymore. Enjoy the evening!
