Citrus Poppyseed Bread (for Steph’s Bakesale!)

Today I am sharing with you a recipe that is going to be featured on Steph’s Bite by Bite. Her bake sale will be held on Friday March 2nd. So don’t forget to check it out!

The bake sale will be held to help Kristi reach her TNT goal of $2,900 which will help support the efforts of Team in Training and The Leukemia and Lymphoma Society to find a cure to a variety of blood disease that affect so many people.

This recipe that I am sharing with you today is one that I got from Patrick’s mom. She sent a loaf of the bread home with Patrick when he got back around Christmas time and I had to say, it was amazing!

Patrick says that his mom has been making this for a really long time and I was happy but also nervous to try it out myself.

I mean his Mom’s recipe was AH-mazing. It was sweet, but the texture is what really had me. So good!

I made a few slight changes to how she made it. She puts wax paper in the pans before putting the batter into the dishes. I decided not to do this. Also she puts the icing on when the bread is still hot, I decided against this too. I waited until the bread cooled and then made the icing thicker so it would stick better.

Ingredients for Bread:

Group A:
  • 3 cups flour
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 2 1/4 cup sugar
  • 1 1/2 tablespoons poppy-seeds
Group B:
  • 3 eggs
  • 1 1/8 cup oil
  • 1 1/2 cup milk
  • 1 1/2 teaspoon almond extract
  • 1 1/2 teaspoon butter flavoring (I used butter extract, so I used 1 teaspoon)
  • 1 1/2 teaspoon vanilla extract
Glaze:
  • 1/4-1/2 cup orange juice
  • 2 cups powdered sugar
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon butter extract
  • 1/2 teaspoon vanilla extract

Preheat oven to 350º.

Spray a rectangular baking dish with cooking spray, make sure you do this liberally. I used a larger pan and then a smaller pan for individual breads.

Combine all ingredients in Group A. Then combine all ingredients in Group B. Pour B into A. OK…how easy was that?!

Bake the larger rectangular dish for about 1 hour or until a toothpick comes out clean. Cook smaller loaves for about 25 minutes or until they spring back to the touch.

Let bread cool until it is at room temperature.

Mix all ingredients together until you have a thick icing. It will be stiff but should be able to be poured. Work with the amounts of ingredients you have until you get the right consistency.

Pour over the top of breads and let run down the sides. Let the icing set for at least 4 hours before you put into containers of any kind or wrap with plastic, foil, wax paper, etc.

This bread is more like cake and believe me, it is wonderful. I unfortunately was unable to enjoy this delicious bread because of Lent and giving up sweets, but it suuuuure did smell good.

I got the seal of approval from Patrick and my Dad and that is good enough for me!
