C is for Chocolate Cake?

Is anyone else amazed that we are almost half way through January?? I am! I From October to present I feel like the duration of time has been about 2 weeks. I am flabbergasted at how fast the days are going!

Today is one of my best friends birthday’s. We are exactly one week apart! (that’s right I have a birthday coming up haha). Lots of January babies in my family. She is such an amazing person and I absolutely love her to death!

I have known Miss Alana (now Mrs.) since I was about 5 years old. We went to elementary school together and part of middle school as well. We have kept in close touch as I moved away, as she did as well (she currently lives in Kansas City, MO). She even made me her maid of honor in her wedding!

Her and I made it a point to keep in touch with each other with letters instead of emails or texts. I love that about our relationship. It feels so much more genuine that way!

I consider her one of my dearest friends and one of the most caring people I have ever come encounter with in my life. Her heart is as big as the globe we live on and I love her for it.

So Happy Birthday Alana! I hope it is nothing but the best for you!

In celebration for birthday, what is the best thing to do?? (besides have a cocktail haha) Eat CAKE right!?

Do you all remember cookie monster? ::sings:: “C is for cookie is good enough for me, C is for cooookie is good enough for me…oh! Cookie, Cookie, Cookie starts with “C”!

Well, I do love me some cookies but C is also for Chocolate Cake…and I have to admit, I like chocolate cake more than I like cookies. Oh, whatever I love all goodies that start with C! haha

Chocolate cake is a little bit of a tradition in my house because my mom makes this stuff she calls “runny frosting” that she drizzles over chocolate cake that literally will make you one of those people that licks the bowl clean. No lie. You say “no way” now…but seriously…I haven’t met one person who doesn’t like this stuff, she has even converted non-chocolate lovers (how can you not love chocolate!).

Anyways, so today I am just sharing a simple chocolate cake recipe for Alana’s Birthday. You can’t go wrong with a moist chocolate cake. PLUS you can have it with whatever you want!

Ingredients for Cake:

  • 2 cups boiling water
  • 1 cup unsweetened cocoa powder
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 1/4 cups white sugar
  • 4 eggs
  • 1 1/2 teaspoons vanilla extract

Preheat oven to 350ยฐ

Grease bundt pan or whatever type pan you choose to use.

In a medium bowl pour boiling water over cocoa and whisk until it is smooth. Let this cool for a bit.

Sift your flour, baking soda, baking powder and salt. Set this aside.

In a large bowl, cream butter for about 2 minutes. Add in sugar and beat together until light and fluffy. Beat in eggs, one at a time and stir in vanilla.

Add the flour mixture alternately with the cocoa mixture to the butter mixture. Spread batter evenly in pan.

Bake for about 25-30 minutes or until a toothpick comes out clean of the cake. Allow to cool on a wire rack.
