Wedding Cake Cookies

I literally mean Wedding Cake shaped cookies 🙂

One of the girls that I work with, Kristin, is getting married on Oct 14th so the women at the office decided to throw her a small bridal shower. I  made the cookies for the shingdig and my mother made the cake. I don’t have any pictures of the cake, but I assure you it was absolutely gorgeous. She is so talented. Someday I hope I am as good as she is at decorating things; at least I have her as my teacher!

Kristin’s colors are purple and cream so my Mom and I wanted to make sure that the cookies and cake reflected that. I was so happy to be able to do something for Kristin. She is just the sweetest thing with such a great sense of humor. I can’t wait to go to her wedding too, I have no doubts that everything is going to be amazing!

The sugar cookie recipe I used is one that I have been using for a while now. I think it is one of the best. It comes out great every single time and it tastes AMAZING!

Ingredients for Sugar Cookies:

  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 stick plus 2 tablespoons unsalted butter (room temp)
  • 1 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract

Cream butter for 1 minute and add your sugar. Beat that mixture until it is light and pale.

Add egg and egg yolk and beat for another few minutes and then add vanilla.

Reduce the mixture to low speed and steadily add in the flour mixture (baking powder, salt, flour). Stop the mixer before all the flour is blended into the dough and finish the mixing with a rubber spatula.

Take the dough from the mixture and place on your counter. Divide the dough in half.

Wrap the 2 sections in plastic wrap and place in refrigerator. Cool for at least 2 hours.

*After the dough has cooled for 2 hours, take 2 pieces of wax paper and lay them on your counter. Take one section of the dough and place in between the 2 pieces of wax paper. Roll dough out until it is about 1/4″ thick.*

Center a rack in your oven and put oven at 350ºF

Place your cookies 1″ apart from one another. Cook them for 9-11 minutes. They will not change color. Let them rest 1 minute before taking them from cookie sheet. Place them on rack for cooling. (Have to get to room temperature before you can decorate).

I doubled this recipe because I was not sure how many people would actually show up. Doubling the recipe made 3 dozen cookies, but it really depends on the cookie cutter you use as to how many cookies you will get.

Ingredients for Icing:

  • 4 cups powdered sugar
  • 2 tablespoons meringue powder
  • 6 tablespoons water
  • 1/2 teaspoon pure vanilla extract

Add the sugar and meringue powder together and mix until combined in mixture. I would advise sifting the sugar at least 2 times before you begin.

Add water and vanilla and beat for 10 minutes or until the icing has lost its shine.

I piped the outline of the cookies first and then let them set and then flooded the cookies by adding water into the icing so it becomes a little runny. If you want to see how to do that see my post here.

I love making cookies. I think I would do it everyday if I could. It is one of those things that I could be having the worst day and then I come home and make cookies and then things are all better. Pretty much cooking anything makes me feel that way haha.
