Oatmeal Nutella Swirl Cookies

I am officially burnt out! Thank goodness it is Thursday and the weekend is almost here. This week with training has been so rough. I cannot believe how much I have done this week and as I look back on it…I am amazed that I am not falling asleep as I type this, haha. Whew…just one of those weeks. Next week should be much better and this weekend should be nice and relaxing for once.

As a side note! Happy Birthday Mom! She had a birthday yesterday and I thought she deserved a mention. 🙂

How is the weather for you this week? It has been uncharacteristically hot for Connecticut. It has been in the 90s all this week (not good for those softball and kickball games I have…I think I sweated my weight out yesterday during kickball). We actually had a wicked string of thunderstorms last night. We even got hail at my house! Crazy weather in the northeast these past few weeks.

Onto the main event…cookies! These cookies were something that I completely made up and added things that I had laying around. They ended up being a super simple cookie that turned out really well. Try them out and let me know what you think!

Ingredients for Cookies:

  • 1 cup quick oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3/4 cup packed brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2-3 tablespoons Nutella
  • 1/4 cup mini chocolate chips
  • Cooking spray

Preheat oven to 350º.

Lightly spoon flour into a dry measuring cup, level with a knife. Combine flour, baking powder, baking soda, and salt in a medium bowl; stir with a whisk until blended.

Place sugar and butter in a large bowl, beat with a mixer at medium speed until well blended. Beat in vanilla and egg. Add flour mixture, beating at low speed just until combined.

Add in mini chocolate chips. Stir in the Nutella (I heated it just slightly so that it was easier to work with), do not stir in all the way. You want it to “swirl”.

    

Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 10 minutes or until bottoms of cookies just begin to brown. Remove from pan, and cool completely on wire racks.

After the cookies had cooled just slightly I drizzled some Nutella on the tops, just for some added yumminess. 😉

    Hope the weekend is a good one. We have 23 hours until school is over…. not that I’m counting. I’m beat. But the weather is yucky… 63, grey and breezy. Downright chilled to the bones… I’ll trade you!
