Bourbon Marinated Flank Steak

As promised I am sharing the meal that I had the Garlic Mashed Red Potatoes with. This my friends is a serious steak recipe. Bourbon, dark brown sugar, Worcestershire… A warning right here, the recipe is SUPER simple but you need to marinate the steak for at least 4-5 hours before you cook it. If you plan on having this, make sure to plan ahead. I have heard all sorts of suggestions when it comes to flank steak. Of course the “cut against the grain” and “cut at a 45 degree angle”…all those. What I have found is that if you marinate a flank steak, IT WILL pay off.

Ingredients for Marinade:

  • 1/4 cup packed dark brown sugar
  • 1/4 cup minced shallot
  • 1/4 cup Bourbon (I used Makers Mark)
  • 1/4 cup low sodium soy sauce
  • 1/4 cup Dijon mustard
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon Worcestershire sauce
  • 1 (2 lb) flank steak
  • Reserve 1/2 teaspoon cornstarch for left over marinade

To prepare this steak get yourself a large zip top bag and combine all the ingredients you see on the list above excluding the cornstarch.

Let the meat marinate for AT LEAST 4 hours. I let mine marinate for 6, but I have a feeling 8 would be even better. Preheat your grill and then place the meat on the grill and cook 5 minutes each side. No more than that or your meat might get tough. That is another thing I have heard with flank steak, you can overcook it very easily and then it doesn’t have a very good flavor. While the meat is cooking on the grill take the leftover marinade and put it into a saucepan with the cornstarch. Bring to a boil; cook for 1 minute, stirring constantly. There you go! Now you have a sauce!

When you take the meat off the grill, place it on a baking sheet covered with foil for about 10 minutes. It will be easier to cut when it has cooled a little bit.

How pretty is that meat? Make sure you do cut against the grain it makes for a more tender piece of meat. Now, I served this with some green beans and those garlic mashed potatoes I posed yesterday. This meat was also another recipe out of Cooking Light which means….it is good for you! YAY!
