Roasted Red & Sweet Potatoes

I am SO tired, haha! I really need to get a good nights sleep after the weekend that I had. For some reason I feel like I just can’t get caught up. Do you ever experience that? Whew, I am beat! I could curl up with a big comfy blanket and my bunny and be all set for about 10 hours, hehe.

Anyways, I promised a recipe in my last post for some roasted potatoes. Well…here it is. Let me tell you, I really feel like roasted vegetables can be the best addition to just about any meal that you have. Maybe not a pasta meal, but still…burgers? Yes! Chicken? Yeup! Steak? ¡Sí! Grilling? Heck yes!

They are easy and healthy and just plain good, so I wanted to share the recipe with you separately from the chicken and artichoke meal I just posted. Wanted to make sure each item got it’s spotlight 😉

Ingredients for Potatoes:

  • 3-4 red potatoes
  • 1-2 sweet potatoes
  • 1 shallot
  • 5 cloves garlic
  • 3 tablespoons olive oil
  • Fresh thyme, use as much or little as you would like
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon seasoning salt

Preheat oven 375°

I have been on SUCH a thyme kick lately. I am sure most of you have seen it. I made thyme mayo for my panini sandwiches not to long ago. I used it in the chicken and artichoke dish and now in the potatoes. I just love the taste AND smell.

Rough chop all your potatoes, they don’t need to be super pretty. Mince your shallot. Cut your garlic into manageable wedges. I personally could just roast garlic, spread that on bread and eat it haha, I know awful…but I adore garlic.

In a glass pan place all your veggies and garlic. Sprinkle with salt, pepper, seasoning salt, and thyme. Drizzle the olive oil on top and toss together to make sure that each potato is covered.


Place in the oven and cook for about 35-45 minutes. Make sure you stir them quite often so that nothing sticks and that all the potatoes cook evenly and are coated with the spices.

Then, you serve on the side of your meal, like chicken stuffed with artichoke and feta :-)…YUM!
