Broccoli Pasta
I have been in the mood for pasta lately. Do you ever get in moods like that? Sometimes I go through these phases where all I want is pasta. Honestly, there are SO many different meals you can make with pasta! It is so versatile! You can make it vegetarian or with meat, cold or hot, and there are so many different varieties!
So, this dish below was just a dish that I came up with from the ingredients I have in my refrigerator. It was simple and easy and always the best part, pretty healthy as well!
Ingredients for Broccoli Pasta:
Angel Hair pasta
1 Broccoli head
1 Zucchini
1/2 of an Onion
Tomatoes (5 cherry, and 1/4 cup of tomato puree)
Garlic
Mozzarella
Olive Oil
Red pepper flake
Salt and Pepper to taste
So, first off lets start of right…
(Diet Dr. Pepper and Wild Turkey Whiskey…yes I am a girl and I enjoy Whiskey haha)
Start cooking your angel hair pasta in a medium-sized pot. I was only cooking for 2 with this dish so I didn’t make a lot of pasta, but depending on how many people you want to serve…adjust accordingly.
In a large frying pan, place olive oil and garlic and cook garlic until it starts to brown. Toss in onion as soon as the garlic starts to take on some color.
Now this puree is something that I made from the tomatoes I had in the garden and all I did was cook the tomatoes down and puree them up so that I would have a tomato base when I needed it later on down the road. I really suggest to anyone who uses tomatoes a lot to do this. Really handy!
Cook the ingredients until the cherry tomatoes start to almost lose their skin, but not entirely. Want them still to have shape.
