Football Quesadillas
So, most of you know that I LOVE football. I watch it every weekend and I am very dedicated to that. Along with the football there has to be food…I like to graze in general when it comes to food, and love it even more so when there is a game on. It just makes it so much easier to be able to watch the game and graze with a lot of food instead of having something that you need to sit at a fancy table for. Believe me, I like fancy dinners…but not during a football game 😉 This past weekend I put out a lot of different kinds…

Taco Cups
Yes, you saw it right. Taco Cups. Here is another great recipe for those football game days. It is always good to have bite size snacks for game days because if you are anything like me…you can’t focus on anything more than reaching for the food and then putting it in your mouth. Who needs a knife and fork on game days?! Not this girl! haha…not to mention if my team does anything good, and if I had anything more than a napkin in my lap?? Holy shmoley the carpet would be in trouble, haha 😛 Now, that I have completely embarrassed myself by telling all of you that I…

Jalapeno Poppers
Football season is coming up again and that means that there is going to be lots of Sundays (and Saturdays if you are a college football fan) full of football, beer, good people, and FOOD! This is a recipe that is always one that my family has during football season. Very tasty, not as good for you as most of my recipes are…but sometimes it is OK to indulge. 😉 Ingredients for Poppers: 7-8 Jalapenos 10-12oz low-fat cream cheese 1 cup cheddar cheese Chives 1 cup flour 2 eggs 1/4 cup of skim milk 2-3 cups vegetable oil This is the part that I was not able to photograph because…

Guacamole
I love avocados! When I say “love” I mean L-O-V-E!! I took a trip to Mexico about a year ago with some friends and my boyfriend…I am not joking you when I say I ate guacamole or something with avocado in it at every meal! I adore it…I am one of those people who can just slice an avocado and eat it on bread…YUM! Or should I say NomNoms 😉 Anyways, this weekend my boyfriend’s Mom invited us over to dinner. She was making beef burritos and I hate going to someone’s house without bringing something. So, I told her I would make some guacamole once I got there (and…

Tomato Pie (wait…what?)
Yes. You read it right..tomato pie. Tomatoes are in season right now, and I know, I know…you are supposed to make salsa and tomato sauce with the leftover 101 tomatoes you have from your garden…welllll, I decided to break from the mold and try something new. Yup, you guessed it, tomato pie! Fair warning: this is pretty time consuming recipe…then again, I don’t know of too many pies that aren’t pretty time consuming 😛 OK, so let’s begin, shall we? Ingredients for pie Crust: 1 stick of butter (unsalted) 1-1/4 cups all purpose flour 1 teaspoon salt 1 teaspoon sugar 2-4 tablespoons (very) cold water Directions for Pie Crust: Freezing the butter…
