Birthday and Save the Tatas cupcakes!
Hope you all had a fabulous weekend! The weather here was so fabulous this weekend. A little bit on the cooler side, but overall extremely nice. I love fall weekends!
This past weekend one of my bf’s friends threw a surprise party for his wife’s 30th birthday. I told him that I would bring cupcakes but I wanted to make them a little more personal for her because she is such a sweet girl. So I asked her husband what her favorite color was. He found out for me and told me it was pink. Perfect! Not only was I so excited to make pink cupcakes but it is also breast cancer awareness month. So, these cupcakes ending up being 2 fold!
I decided to make light pink and a darker pink cupcake. I just adjusted the amount of red food coloring that I used. Actually, the lighter pink cupcakes I made a boo-boo and accidentally reached for the mint extract instead of the vanilla. Oops! I was pouring it into the mix and then caught a whiff of it and thought, OH NO! Surprisingly they turned out really good and it was just a small hint of mint that was in the cupcake. PHEW! hehe 😛
Ingredients for cake mixture:
- 1 cup white sugar
- 1/2 cup butter
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
Ingredients for Icing:
- 1 cup (1/2 lb.) unsalted butter, at room temperature
- 4 cups (1 lb.) powdered sugar, sifted
- 1/8 teaspoon salt
- 2 tablespoons milk
- 2 teaspoons vanilla
*have the red food coloring handy too (if you want to make pink 😉 )
Preheat oven to 350° and cook cupcakes for 17-21 minutes.

*just as a side note: my mom taught me that if you put cooking spray in each cup before you bake them, the cupcake will come out of the wrapper extremely clean without leaving behind any part of itself!*

Gorgeous cupcakes!! Your friend must have loved them, and what better way to raise awareness on such a wonderful cause! Working at an all girls school even makes it more important to me than it already was. I shared a waiting room with many women as we waited for our treatments together, It broke my heart to see some of them…….

You know, I’m really glad you posted this. I have yet to have a good cake recipe from scratch. When I make cupcakes they’re either from a box or they taste less-than-par. Even when I don’t substitute butter for applesauce. 😀

I think that cake from the box is pretty good, but sometimes you have to add a little more love to it to make it turn out well. This is a really reallly reallllly simply recipe from scratch, try it out and let me know how it goes 🙂
