Stuffed Red Peppers

The Lenten season has begun…I have always taken part in Lent. Something my family and I have been doing ever since I can remember.

Do you give anything up for Lent?

I know a lot of people say they take Sundays “off” during Lent so they can indulge in that they gave up, I am not one of those people. I do stay away from meat on Fridays during Lent, but then again I don’t eat a lot of meat to begin with.

(I really need to try and get more protein in my diet though)

This year I decided to give up 2 things. I normally give up all sweets, because well…it’s hard! I mean I love to bake and I love to try new baking recipes (not that it will keep me from baking, Patrick still needs something to eat hehe). So that is the first giving up task.

The second…are you ready?

Alcohol.

Yup, no alcohol until Lent is over. Whew.

Now don’t get me wrong, I am not some raging alcoholic that drinks every night. But let’s think about this…

This weekend I have a wedding to go to…Noel’s (Congrats! Super looking forward to it!)…and that means I won’t partake in ANY drinks for celebration. That in itself will be a feat.

St. Patty’s is during Lent…so no booze on the Holiday. No irish car bombs?! Holy cow.

Not to mention, sometimes it is just nice to come home and have a glass of red wine after a really rough day at work. Knowhadimsayin’?

Needless to say, I gave up 2 things that I think will be very difficult for me to leave behind for a number of weeks.

If you practice Lent, what are you giving up??

In an effort to put more protein in my diet, please enjoy the following recipe for some stuffed peppers.

Ingredients:

  • Red Bell Peppers
  • Low Fat ground Turkey Breast
  • Fat free Chicken Broth
  • Brown rice
  • Broccoli
  • Celery
  • White onion
  • Carrots
  • Yellow Bell Peppers
  • Spinach or Kale
  • Red Pepper Flake
  • Pepper
  • Salt
  • Dried Basil
  • Olive oil

(I didn’t put exact measurements because there aren’t really any and it depends on how many people you are cooking for, just have fun!)

Cook your rice per the directions on the package and set to the side.

Preheat your oven to 375ΒΊ

Line a baking sheet with aluminum foil and place your whole peppers with the tops cut off (seeded and de-veined). Drizzle with olive oil pepper and salt. Put in the oven for about 10-15 mins until they start to get tender and take out of the oven to cool.

Cook your turkey with your spices and a some chicken broth. Toss in all your vegetables and let them cook until they get vibrant in color.

Mix your brown rice and turkey mixture and then place into each bell pepper.

Place the peppers back in the oven for about 20 minutes.
