Green Beans for Any Meal

I promised you a green recipe didn’t I? Well here it is!

I have a confession…I used to HATE green beans! I would refuse to eat them when I was younger, and when I say refuse…I mean RE-FUSE! The only time I started eating green beans was in college because I was too poor to eat anything but the cafeteria food when I was a Freshman and Sophomore. So needless to say, I learned to eat them in college real fast haha.

Now? I love green beans! I swear as I get older my taste buds change. Oh well..

This green bean recipe is awesome for any side dish to any meal. My family loves to have it for big dinners. It is a staple on Thanksgiving and Christmas. Really though, I love to make it anytime. It is such a great and flavorful side dish and I promise if you like green beans you will like this too.

Ingredients for Green Beans:

  • Green beans
  • Bacon
  • Red bell Pepper
  • Butter
  • Salt
  • Pepper

First what you want to do is cook your bacon, and then chop it up. Also take your red bell pepper and chop that up as well. Easy enough right?

Cook your green beans in a pot of boiling water for about 3-4 minutes just so they cook slightly. If you prefer a more cooked green bean, by all means leave them in the boiling water a little longer. I love the crunch of green beans so I tend not to cook them for as long. Place them in ice cold water so that the cooking stops completely.

In a large pan place your butter on medium heat and let melt just a tad. Throw in your bacon and red bell pepper into the pan and cook until the red bell pepper starts to change color just slightly. Hard to explain the color change, it is still red but it is almost like it gets an orange glow around the edges from cooking. If you aren’t sure, just pick one out and taste it to see if it is how you want it to be.

What’s next you say? Toss them yummy green beans into the pan with the butter, bacon, and red pepper. Stir them around and add a pinch of salt and pepper and let the mixture cook for maybe 5 minutes.

And there you go! I perfect side dish to any meal that you want. OR you can just make a meal out of this! I had this with my huge steak on New Years and ending up eating more of this than I did the actual steak! ๐Ÿ™‚
