I needed a break from social media for a bit. The world is scary right now.
I have been unplugging a lot after work.. the endless Zoom calls are getting so tiring. Not to mention my company has been struggling lately…
I work in Aerospace and with Covid, well clearly things have been a bit dire in that area of work.
I am very fortunate and lucky to have a job still, but it has been a uphill battle to say the least for what seems like the better portion of this year.
On a bright note, I am going to be going to visit some friends from college this week and I cannot wait to see them. My friend had a baby and with Covid, I was never able to meet the sweet thing in person.
Welp! That is changing and I cannot wait to be reunited with my friends for a few short days.

Today I am sharing with you my favorite way to make deviled eggs. Truth be told I am not a mayo fan (I prefer Miracle Whip… please don’t shame me haha).
So I am always trying to find creative ways to not use mayo in traditional recipes.
Deviled eggs are a staple in my family. Being from the Midwest, every family gathering always had deviled eggs.
I feel like people have just now started to appreciate the deviled egg, you see all the fancy gastro pubs with super fancy rose water deviled eggs (I am exaggerating, kinda).
I find it funny that many people almost look down on deviled eggs, but they always seem to be the first thing to disappear at parties…. hmmmmm

Avocado Deviled Eggs

6-8 eggs
1 ripe avocado
1/4 cup yellow mustard
1/2 lemon squeezed
Salt & Pepper to taste
Paprika
Chives
Directions
- Hard boil your eggs (see notes) & peel
- Remove the yolk and place into food processor with Avocado, lemon, yellow mustard, salt and pepper.
Mix until completely smooth - Pipe your mixture back into the egg whites (you don’t have to pipe them but it does make them look fancy)
- Sprinkle with Paprika and Chive
Notes
- To make the perfect boiled egg…. YOU MUST have a timer. Place the eggs into a cold bath of water, completely covered. Place them on your stove and bring the eggs to a boil. Once they are boiling remove from the heat, place a lid on the pot and set your timer to 9 minutes. Let sit in hot water. Once 9 minutes is up, place them under cold running water and place ice into the pot. This will stop the cooking process. You may need to change the water a few times to keep them cold. Peel and serve!
