Tomato & Mozzarella Bites
Well hello everyone! How are you doing today on this Thursday morning? It has been a weeee bit chilly this week. Yesterday morning we had a high of about 5ºF. Just a tad chilly.
I am ready for snow! I am getting frustrated with this no snow thing. I love to snowboard and this no snow thing is REALLY cramping my style. Grrrrrr!
Every year my parents throw a party of some sort. Ever since I can remember my family has been putting on parties with TONS of people. When we lived in Kansas City, their Christmas parties were epic.
When I say epic…I mean, 100+ people fitting into a house that was less than 2000sqft. I mean, SO much food that we could have fed the entire Navy and still had leftovers. I mean, SO much booze we could make all of the students at Penn State not thirsty anymore. E-p-i-c.
There is one dish that I am always really excited about whenever the parties come around. It isn’t anything super fancy or really hard to make…it is actually the complete opposite. It might be one of the most simple things to make and it is really delicious!
Not to mention they are perfect for parties that are just serving small bites or appetizers (which I think are the best parties). Give me cocktails and some spin dip and I am a happy girl 😉
Ingredients for Bites:
(amounts of each ingredient depend on how many you want to make)
- Cherry tomatoes
- Bite size Mozzarella (can find these already in olive oil at places like Costco, Sams, BJs, etc.)
- Olive oil
- Fresh Basil
- Red Pepper flakes
- Salt
- Pepper
- Garlic
- Long toothpicks
Take your cherry tomatoes and slice in half. Place you olive oil, basil, flakes, garlic, cherry tomatoes, and mozzarella in a bowl. Toss together and let the olive oil mix sit for at an hour in the fridge.
Take your toothpicks and place one tomato half on the stick, then a piece of cheese, and then the other half of the tomato. This will make your bite.
Place in the fridge until you are prepared to serve.
See? I told you they were simple. The best part is, not only are they simple but they are SO delicious too! I just love that don’t you?

This is a great party appetizer. Big on flavor and very little time involved. They look so tasty too-I am sure that at the “epic” parties, there was always a request for more. Making enough, since they are so tasty, would be the hard part!

These are such a neat idea, Ravie! These would be great for any event where you need appetizers or just to keep a healthy snack in the fridge. Much easier to grab one or two of these than it would be to prepare a bowl of ice cream.

Yay Claire! So glad someone else wants snow like I do! People think I am NUTS when I tell them I want snow, but it is the truth…I just love it. I have always liked Fall and Winter the most out of all the seasons too!

They might be! I’m not sure actually…I have always made them the day of because I was concerned the tomatoes might get soggy overnight. If you do it let me know and tell me how it goes!
