Tomato Salad
Holy tornadoes!! New England had all sorts of tornado touch downs last night. There was quite a bit of damage to a lot of Western Mass cities. Scary because I spend a lot of my time in Western Mass! I mean I have seen my fair share of tornadoes since I am from the Midwest, but never in New England! Everyone I know is alright but the damage is pretty extensive in like Springfield, Westfield, and West Springfield. Crazy stuff…
Guess what?? It is Thursday already!! Woohoo! I have to say the week has been going rather fast for me. Work has been keeping me really busy. Next week I am in a training for work too…it will keep me occupied every single from 8am-4:30pm! YIKES! 5 days of being stuck in a room for hours on end…I can’t say I am too thrilled about that haha.
This recipe I am going to share is something I have come to know and love very much since I met Tino. His family introduced me to tomato salad. Not just any tomato salad, but the best frekkin’ tomato salad EVER! It is fresh and light and you would not believe how delicious with so few ingredients.
Ingredients for Tomato Salad:
- 2-3 medium tomatoes
- 1 cucumber, peeled
- 2 cloves garlic
- 2 tablespoons fresh basil
- 3 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
Cut your tomatoes into small wedges, or larger wedges. What ever you prefer! This is a make it how you want it deal. Peel your cucumber and thinly slice.
Put your tomatoes and cucumbers into a small bowl and toss together. Put in garlic that is chopped roughly. Does not need to be perfect here. Add in your basil that is also roughly chopped. Add the salt and pepper and olive oil. Toss one more time and there you have it!
This is one of those things that I wait for every spring and summer. It is so simple yet so delicious and goes with just about anything you can think of. I pair it with all sorts of meals and it just shines.

The tornadoes are a sin. My gf’s work building is completely demolished. Every Tornado that has hit this yr has effect a friend or family member I know 🙁

On a happier note, your tomato salad looks incredible. We grew up eating tomato salad of sliced tomatoes, sliced onion, salt, pepper, a splash of vinegar and a pinch of salt. I love the idea of the cucumber, garlic and basil.
