Pasta Arrabbiata with Carrot Noodles
Remember how I used to blog? Yea me too. I have been terrible about blogging lately. Not because I haven’t created lots of tasty treats but I feel like I really haven’t had much to say. Do you ever have that? Either way, I am super excited to be sharing this post today because it has to do with the amazing spiralizer I told you about with my Zoodles post. I was invited by Tuttorosso Tomatoes to share a recipes for their “Inspiralize the Spring” promotion. You can find all the details here, but I will go ahead and tell you what it is all about anyways.. 😉 During the…

Provençale Chicken
Hello everyone, how is life treating ya? I have to say I am pretty stressed. We had a rather unfortunate occurrence at our house this past weekend which really put a damper on the week. We came home to some lovely water damage in our powder room, yea the one I showed you guys before that was completely done. The ceiling is not salvageable. Which means taking down the ceiling, replacing the drywall, redoing the plastering, priming and painting and potentially having to redo the crown molding and caulking that is already been done. How did that happen you ask? Well, remember how I told you about how we were…

Pesto Shrimp Pasta
Hello there! I trust you had a fabulous weekend. My weekend was pretty good. Definitely went to a Mac and Cheese tasting with some of my friends, haha. Mac and Cheese tasting you say?? Believe me this was the best idea they could have ever had. Each person that came to the tasting brought their own Mac and Cheese dish. They were numbered and then we all tried the dishes and cast our votes. My Mac and Cheese came in 2nd place, woot woot! haha, I have to say it was pretty fun and all the different Mac and Cheeses?! Can we say food coma? We had a blast chatting…

Tomato Salad
Holy tornadoes!! New England had all sorts of tornado touch downs last night. There was quite a bit of damage to a lot of Western Mass cities. Scary because I spend a lot of my time in Western Mass! I mean I have seen my fair share of tornadoes since I am from the Midwest, but never in New England! Everyone I know is alright but the damage is pretty extensive in like Springfield, Westfield, and West Springfield. Crazy stuff… Guess what?? It is Thursday already!! Woohoo! I have to say the week has been going rather fast for me. Work has been keeping me really busy. Next week I…

Garden Pasta Salad
Congrats Tino!! He just bought himself a brand new 2011 Hyundai Sonata, fully loaded SE 2.0T, and traded in his Ford Explorer. His exploder as we called it! He is a hard core Ford guy so I have to say I was very shocked when he decided on the Sonata, but the car is really beautiful and certainly is going to get him better gas mileage than the exploder. Although, I know he will miss his big car…but I am SO proud of him for buying his first *new* car (you know how that goes, owning lots of cars in your lifetime but never a *new* car)! In spirit of…

My First Canning Experience
YES! I did it! I canned for the first time ever this past weekend. I have to say, it was much easier than I thought it would be. Strangely enough, the only thing that took a good amount of time was the cooling down of the jars. I have always seen my mother canning since I was little. Jelly, tomatoes, salsa, sauce, cucumbers, peppers, anything she could, she was canning. Still does to this day. I mean even HER mother and my Dad’s mother canned! I used to watch it when I was little and the women in my family would say “some day you will being doing this too,…

Taco Cups
Yes, you saw it right. Taco Cups. Here is another great recipe for those football game days. It is always good to have bite size snacks for game days because if you are anything like me…you can’t focus on anything more than reaching for the food and then putting it in your mouth. Who needs a knife and fork on game days?! Not this girl! haha…not to mention if my team does anything good, and if I had anything more than a napkin in my lap?? Holy shmoley the carpet would be in trouble, haha 😛 Now, that I have completely embarrassed myself by telling all of you that I…

Summer Bread
Ingredients for Bread: Loaf of Italian bread (can be a day old) 3-4 tomatoes 1 green bell pepper fresh mozzarella 6-7 basil leaves 2-3 cloves garlic Olive oil (2 tablespoons or so) Preheat oven to 350 ° Now that summer is coming to a close this is what I am going to miss from the summer the most. My garden….there is absolutely nothing better to me that fresh produce from your garden. Everything tastes better, it even feels better making it when it comes from your own garden/home. This bread is something that I really enjoy and I make often during the summer because it is so tasty and just…

One of my favorites!
This is one of my most favorite recipes and it is quick, easy, and healthy! Roasted Tomatoes with Mozzarella! YUM! I went on a strange kick back when I was in college to go on a diet. I do believe my grandparents were having their 50th wedding anniversary in Florida…soooo, my mom and I decided that we needed to lose a couple of pounds each so that we looked our best. Well, we decided that the South Beach Diet was the way to go…. It definitely was NOT the way to go…at least not for me. I was so miserable on that diet…and I mean, m i s e r…

Homemade Bruschetta
I find that there is nothing better than homemade food! When it is summer time and you can get ingredients from your garden…that is my favorite time of year! Ingredients: 3 fresh tomatoes 4 fresh basil leaves 2 gloves garlic 3 tablespoons olive oil salt and pepper to taste Italian bread (I prefer to use day old bread for this because you toast the bread)
