End of summer… Means creative summer dishes. But first, how the heck is it already September? How did that happen? It seems like yesterday we were all watching the TV and social media to see what would unfold with Covid and the month of March was PAINFUL… and then all of a sudden… It is September. How’s that happen? I hope you are all hanging in there. I have felt extra isolated lately. I feel like I am ready for a little bit of normalcy in my life. Maybe not the returning back to the office part, at least not full weeks. I like working from home. However, being someone…

Grilled Corn
Hey! So remember how I used to be a food blogger?! Holy shit. Meeee too! Life has gotten in the way quite a bit. Once upon a time… Before I owned a house… Became a wife… Got a puppy… Worked full-time… I could regularly do, just that. Lately, it has been quite the struggle. Now that Patrick travels pretty much every month, a lot of the responsibility of the house falls on me. And that’s okay. It is part of it, but it definitely doesn’t leave a lot of free time for me. I am fine with being alone. I have never been one of those people that is afraid…

Zucchini Fritters
I am swimming in zucchini… So many zucchini! and since I have a person in my house that hates zucchini, I have to come up with creative ways to get it into dinners. Lucky for me, there is one night a week right now where I am on my own for dinner, so guess what my dinners have consisted of. Wow, how did you guess? Yup, zucchini. I will pretty much eat it any which way, but I wanted to try something different. Do you ever get like that? Where you know there are a million ways you have already had something, and they were all super delicious but you…

Corn on the Cob with Roasted Jalapeño Butter
Do you ever notice that sometimes things don’t work out the way you planned them to? I never planned on moving from state to state the way I have. Although I wouldn’t change it for the world. I think that moving as much as I have has really shaped me as a person. There are people and places I would have never met or seen if I hadn’t of moved from KS to PA to now CT. I was very fortunate to be able to visit with my family and friends over the July 4th holiday in KS. I miss them all terribly and sometimes it is nice to go…

Summer Bread
Ingredients for Bread: Loaf of Italian bread (can be a day old) 3-4 tomatoes 1 green bell pepper fresh mozzarella 6-7 basil leaves 2-3 cloves garlic Olive oil (2 tablespoons or so) Preheat oven to 350 ° Now that summer is coming to a close this is what I am going to miss from the summer the most. This bread is something that I really enjoy and I make often during the summer because it is so tasty and just…

Too many Summer Tomatoes??
I don’t know about you, but I am elbow deep in tomatoes right now. I am sure most of you have seen my previous tomato posts. The tomato pie, the salsa, etc. Well…I completely forgot about one of my favorite things to have in the summer time with fresh juicy tomatoes…. BLTs! That’s right people, RavieNomNoms loves BLTs. The fresh tomato, lettuce, and crispy bacon…mmmmm, YUM! Can there be a more simple and satisfying delight?!? I think not! I do tend to adapt my BLTs just slightly as I do most things to make them slightly healthier than the original. I hope you enjoy my take on the classic BLT…
