Roasted White Sweet Potato Fries
So this weekend we got some serious snow. Not as serious as some of the other storms we have had, but the rate at which it came down was the problem. I tend to like snow, but when you have to clean it up? Not so much fun anymore. I still think is is beautiful and since Patrick and I live in the woods, it makes for some pretty amazing views. We also tend to find some interesting prints in our snow after a big one, not sure if it is the neighbors cat or a animals from the woods. Probably a bit of both right? Speaking of critters… I…

Rosemary Roasted Almonds
Good Monday Morning. Did you all have a nice weekend? Mine started off with me buying a wedding dress! AHHHHHHHHHHHHHHHHHHHHHHHH! That’s right, this is getting reallllllly real now. My mom and I went to the bridal shop on Friday already having an idea of which dresses to choose from. We had narrowed it down to 2 after my 2nd visit to the shop. I did my hair nicely and had some nice earrings on and actually wore high heels as to get a better idea of what the dress would look like. We went in open minded and I had one other dress I wanted to try but we were…

Pickled Jalapeño Deviled Eggs (Hellmann’s)
Received a Top 50 Award for my recipe for this contest! Thank you Hellmans! ******************************************************************************************************* Who loves deviled eggs in the summer? I do! I do! Deviled eggs is one of those thing that once Easter comes around, I feel like I should be eating all the time. Not to mention I just love eggs in general. Deviled eggs, scrambled eggs, egg salad, omelets….anything really and I am in when it comes to the incredible edible egg (I was not paid to say that 😉 ). I could literally eat like 12 deviled eggs in one sitting without even blinking. It is one of those comfort foods for me you…

Two Bean Pineapple Salsa
Whew! It has been a while! My poor blog has gotten neglected for the past few weeks. Between traveling for work, being sick and the weather being nice enough to make the grass grow…I have been a busy girl! How have you all been? I am hoping well…the nice weather has been really great to have. This winter seemed extremely long. I do love my snow, but I was ready for some sunshine. The one good thing about all the sunshine is that we get some awesome green plants and colorful flowers. I was so happy to see Patrick and my house look so green again. There is something about…

Black Bean Soup with Poblano Corn Pudding
So I had to give my ring up…. 🙁 Before you get too upset, it is because I needed it re-sized, but I still didn’t want to give it up haha It is amazing how quickly I got used to that pretty thing being on my ring finger 🙂 I have also determined that where I work is not conducive to my super sparkly ring. These florescent lights do nothing for me. Do you think that is a viable reason to quit? haha Because I kind of do 😉 It has officially been a week since Patrick and I got engaged. Can you tell that I am still excited? Haha…

Pad Thai
Happy Friday!! Ok first off….really snow?? There is 2″ of snow where I work and guess how much I got at our house? ummmm about 13″ and the same at my parents place. They are out of town for 2 weeks, so Patrick and I have 2 driveways to clean that have 13″ of snow on them and there is less than 2″ on the ground 20 miles away…really mother nature? Really. Second off… I have a question for all of you out there that are married/engaged… Did people ask you when the wedding was like less than 12 hours after you got engaged? Patrick and I have now been…

Baked Jalapeño Poppers
Waking up to these cool mornings makes me happy. Walking to my car in the morning to head to work with the brisk air hitting my cheeks and taking a deep breath in of the crisp scent of Fall. Can you tell I love Fall? It reminds me of family, gathering with friends, riding on hayrides, apple cider doughnuts, tons of delicious food and {dare I say it} Christmas planning! There is just something about this time of year that makes me happy, to my bones just happy. Whether it is cuddling up with a book and reading in front of the fire or working on a cross-stitch while watching…

Chicken Tacos with Cilantro Slaw and Avocado Cream
I started my weekend off right this past week…yup, that’s right…with cocktails! I know a lot of you saw my delicious cocktail picture on book of faces at precisely 6:31pm Friday night. I was lucky enough to take the afternoon off from work last Friday and take a nice bike ride. I am SO glad that I did that too because like you read in my post yesterday, it is supposed to rain for the next 6 days… 🙁 . I am very happy that I was able to get out and enjoy the last of the sunshine for a while. Anyways, to celebrate the gorgeously warm weather…what better cocktail…

Spicy Chipotle Grilled Shrimp with Pineapple
What a perfect weekend! It was sunny and there was lots celebrating! Tino’s grandmother turned 95 this weekend!! How amazing is that?! She is such a pistol too, hehe. Even at 95 she is still sneaky, she was able to get a taste of her cake without ANYONE, besides me but I wouldn’t dare say a word ;-), seeing her (you know the sneaky finger in icing trick, haha). I was also able to celebrate a fabulous Mother’s Day with my mom. Every year it is our tradition to go to her favorite farm and to pick out all her vegetables, spices, flowers, etc. for her garden my treat! Then…

Spicy Pasta
It is Wednesday and today is my work Holiday party…so you know what that means right?! HALF DAY! I feel like I am back in elementary school where I am getting an early dismissal. It is always nice to get a break from the office 🙂 I finally got the cold weather I have been praying for but the snow is still lacking…we got a dusting of snow earlier this week but nothing you can play in haha. Send your positive foodie vibes my way for some snow…I am desperate! I love spicy food. Any kind of spicy food, I will definitely reach for it! Every time I make pasta…
