Pickled Jalapeño Deviled Eggs (Hellmann’s)
Received a Top 50 Award for my recipe for this contest! Thank you Hellmans! ******************************************************************************************************* Who loves deviled eggs in the summer? I do! I do! Deviled eggs is one of those thing that once Easter comes around, I feel like I should be eating all the time. Not to mention I just love eggs in general. Deviled eggs, scrambled eggs, egg salad, omelets….anything really and I am in when it comes to the incredible edible egg (I was not paid to say that 😉 ). I could literally eat like 12 deviled eggs in one sitting without even blinking. It is one of those comfort foods for me you…

Two Bean Pineapple Salsa
Whew! It has been a while! My poor blog has gotten neglected for the past few weeks. Between traveling for work, being sick and the weather being nice enough to make the grass grow…I have been a busy girl! How have you all been? I am hoping well…the nice weather has been really great to have. This winter seemed extremely long. I do love my snow, but I was ready for some sunshine. The one good thing about all the sunshine is that we get some awesome green plants and colorful flowers. I was so happy to see Patrick and my house look so green again. There is something about…

Watermelon Black Bean Salsa
How was your 4th of July?! Do anything fun? Patrick and I went up to Boston to see the “Boston Pops”, aka their firework celebration on the 4th of July. We had some…interesting events that happened while we were up there haha. Just to list a few: We road the T (subway) just about wherever we went. It is convenient and cheap, so why not right? Well whilst we were on the T, there was an older gentleman (perhaps I shouldn’t call him that, just keep reading) who was having quite a sneezing attack. Such an attack that the majority of those sitting around him moved down a little in…

Black Bean Burgers
The moving is still going on. We have made some major headway and I am glad to report that we will be finishing up this weekend! WOOT! Saturday morning we have a crew of guys coming over to help with the really big furniture, which will make this entire process a lot easier. With moving as much as I have in my life, I have gotten pretty good at boxing and moving things…but those big pieces of furniture they are a b*tch to move! One word of advice if you ever do move, use a moving company. I know it is pricey but I promise it will be worth it…

Fishy Quinoa
Hello everyone…how are you this week? This week has been kinda gone fast for me so far. For a few reasons really… Patrick and I have been working to get him moved out of his apartment because we are moving in together :-), and when I say working, I mean…like we have barely done anything haha. He has to be out of his apartment by the 9th of February so we really need to get our a$$es in gear. We have done SOME, but not nearly as much as we need to. I am hoping this weekend that we can REALLLLLLY get to work and get some things moved. Wish…

Tilapia with Pineapple Salsa
This week is supplier week at work, which means BUSY! Our company has all our suppliers come in this week for a trade show and then a golf tournament for fun and to also show our appreciation for them doing business with us. It makes for a very chaotic and choppy week. Interruptions and supplier dinners all week long haha. Needless to say, I am ready for the weekend already. Which will include MORE demo on my parents house… This past winter when there was so much snow in New England my parents ended up having a TON of water damage from the ice on the roof. So, they are…

Fiery Flank Steak with Tomato Jam
Happy Friday everyone! I hope that you all have had a fabulous week and are gearing up for your weekends. May not be a long weekend like this past one, but still a weekend right? I have been doing my best to get caught up this week on lots of things from being away. Work, bills, friends, my blog! Man oh man…I feel like I haven’t been posting regularly and it feels so weird haha. I am sure some of you know what I am talking about. If you go on vacation or are away and you don’t post things or aren’t around to look at other recipes, it feels…

Corn on the Cob with Roasted Jalapeño Butter
Do you ever notice that sometimes things don’t work out the way you planned them to? I never planned on moving from state to state the way I have. Although I wouldn’t change it for the world. I think that moving as much as I have has really shaped me as a person. There are people and places I would have never met or seen if I hadn’t of moved from KS to PA to now CT. I was very fortunate to be able to visit with my family and friends over the July 4th holiday in KS. I miss them all terribly and sometimes it is nice to go…

Jalapeno Turkey Burger and Baked Potato
Once again another week comes and goes my friends. Another busy week has come and gone and I must say, I am pretty exhausted. But I can’t be!! I have rehearsal tonight for the next show that the dance company is in. We have 2 shows Saturday and I am sure they will go extremely well, I just need to get some energy in the next few hours before I jet off to rehearsal. 😛 Do you ever have one of those days where you just want a meal that is super comforting and satisfying? I had one of those nights and I wanted to make something that was going…

Black Bean Quesadillas
What a day! I am so stressed out at work…I am really hoping that because I am so busy today that Friday will come sooner than I think it will! Seems forever away right now. Keeeep positive right?? Haha I have been doing really well on my “no sweets” for Lent goal. So far I haven’t caved at all, which I am really proud of! haha I really love desserts so this has been really hard for me. I think I miss making them more than I actually miss eating them. Is that weird? Anyways, I have been doing the whole no eating meat on Fridays which really doesn’t bother…

Jalapeno Burgers
Happy Thursday to you all! I am getting settled from my trip I was just on in Baton Rouge finally. I literally ate celery at lunch yesterday with a bottle of water. I was STILL full from lunch the day before at lunch time the next day. Sheesh! I wish I could have stayed longer but I don’t know if my waistline could have handled it, haha. We are still experiencing rain in the northeast which makes it hard to get out of bed, but also gives you more time to look up some new recipes for things because you are stuck inside. I had a hankering for a burger…
