Artichoke & Feta Stuffed Chicken
What a depressing weekend for Steelers fans…I myself am a Steelers fan because I lived in PA for a while. I was closer to Philly, but I really didn’t like the Eagles…so I went with the other team. I went to college closer to Pittsburgh than Philly anyway. I was so disappointed, I really felt like Pittsburgh was the better team but because of interceptions and fumbles we just got killed. I think on everything else in the game the Steelers really outplayed the Packers. Especially on the run game…but Ben just threw those interceptions and every time he did the Packers monopolized and scored. That is super hard to…

Chicken Scaloppine with Lemon Sugar Snap Peas and Asparagus
Another week has started already! I don’t know about you, but this year is just flying by me. I can’t believe that it is September…I can’t believe that September is almost over!! I guess that phrase is right “time flies when you are having fun”. đ I have a feeling that this week is going to be a good one. I think work has been going better lately, which is a huge stress relief for me. I have been doing really well and just bringing in the big bucks for the company, haha! I don’t mean to beep my own horn but…BEEP! đ It is hard to be younger and…

Broccoli Pasta
I have been in the mood for pasta lately. Do you ever get in moods like that? Sometimes I go through these phases where all I want is pasta. Honestly, there are SO many different meals you can make with pasta! It is so versatile! You can make it vegetarian or with meat, cold or hot, and there are so many different varieties! So, this dish below was just a dish that I came up with from the ingredients I have in my refrigerator. It was simple and easy and always the best part, pretty healthy as well! Ingredients for Broccoli Pasta: Angel Hair pasta 1 Broccoli head 1 Zucchini…

One of my favorites!
This is one of my most favorite recipes and it is quick, easy, and healthy! Roasted Tomatoes with Mozzarella! YUM! I went on a strange kick back when I was in college to go on a diet. I do believe my grandparents were having their 50th wedding anniversary in Florida…soooo, my mom and I decided that we needed to lose a couple of pounds each so that we looked our best. Well, we decided that the South Beach Diet was the way to go…. It definitely was NOT the way to go…at least not for me. I was so miserable on that diet…and I mean, m i s e r…

Too many Summer Tomatoes??
I don’t know about you, but I am elbow deep in tomatoes right now. I am sure most of you have seen my previous tomato posts. The tomato pie, the salsa, etc. Well…I completely forgot about one of my favorite things to have in the summer time with fresh juicy tomatoes…. BLTs! That’s right people, RavieNomNoms loves BLTs. The fresh tomato, lettuce, and crispy bacon…mmmmm, YUM! Can there be a more simple and satisfying delight?!? I think not! I do tend to adapt my BLTs just slightly as I do most things to make them slightly healthier than the original. I hope you enjoy my take on the classic BLT…

Chicken Wraps with Pesto Aoili
So, I left the blogging world there for a couple days…sorry my fellow bloggers! I am back…I just had such a rough week at work. Had one of those work weeks that makes you question what you do and why you work so hard. Was feeling kind of down on myself, but I am so glad it is Friday and that I get a few days off from work. Actually this weekend my parents are throwing a BBQ, which I am actually going to help my mom with ALL day tomorrow prepare for. So hopefully I will have lots of fun pictures for your viewing pleasure at the end of…

Zucchini & Squash Pasta (aka I have WAY too many veggies right now from the garden…so what can I come up with? haha)
CLEARLY! You can see that I have an excessive amount of vegetables that I need to use. Apart from my making zucchini bread every other day I wanted to come up with something to use all these goodies. Let’s put our thinking caps on here….. Ingredients: 1 Zucchini 1 yellow squash (seeded) 3 small tomatoes (any kind you like – I used plum) 1/2 of a green bell pepper 1 tablespoon fresh garlic 1 tablespoon butter 3-4 fresh basil leaves 1/2 teaspoon dried mint 1/2 teaspoon dried thyme 1/2 tablespoon red pepper flake salt to taste pepper to taste 8-10 oz Penne pasta handful of shredded Parmesan for garnish Started…

Cucumber & Sour Cream Salad
This one of my favorite recipes…has been for a really long time. My mother taught me to how to make it and her grandmother taught her how to make it. I know that many people have probably heard of it, eaten it, made it…but it is a family tradition that I wanted to share so others could maybe do that same with their family. Ingredients: 2-3 small cucumbers 1/2 cup of light sour cream (cannot really use non-fat for this it has too much liquid) 1 teaspoon pepper 1 tablespoon dill 1 teaspoon kosher salt I like to peel my cucumbers when I make this salad, but it completely up…

Momma knows best…
My mother is a great cook! She taught me most of what I know about food. So whenever she makes something…I am always one of the first people at the table to be the guinea pig. đ She has a very beautiful garden and always uses her fresh vegetables and herbs to cook (which is where I learned it). Literally she is one of those people who has a garden that should be in a magazine…check it out:      I mean how much more gorgeous can she make this garden?! She is incredible… I enjoy spending time with my parents…most of the time đ I was visiting with…

Garden Fresh…
On top of everything else I do…I enjoy working out. I really try my hardest to work out 3 times a week (on top of playing softball in an adult league, which I do 2 times a week). So, a lot of times I really would rather just go to the gym right from work…that way I don’t get settled at home and then not go at all! haha đ Anyways, so after my intense cardio session this evening I came home wanting something light. Then remembered…”hey! I have a ton of fresh veggies in my garden!”….BINGO! I made a salad this evening with all fresh ingredients right from my…

Chicken and Veggies
Little more food for everyone…I enjoy cooking with fresh ingredients…I seldom cook with anything but! It is hard sometimes in the winter though, which is why I love the summer SO much! đ (sautĂ© mushrooms with butter and garlic, toss in tomatoes for sweet taste – cook on high heat until liquid is reduced. Throw in peppers at last second so they do not lose their bright colors.) (marinate chicken in lemon juice, salt, pepper, rosemary, and olive oil for an hour. Grill up and eat warm) Ingredients: Chicken, Rosemary, Red peppers, Green peppers, Mushrooms, tomatoes, garlic, salt and pepper to taste.

Homemade Bruschetta
I find that there is nothing better than homemade food! When it is summer time and you can get ingredients from your garden…that is my favorite time of year! Ingredients: 3 fresh tomatoes 4 fresh basil leaves 2 gloves garlic 3 tablespoons olive oil salt and pepper to taste Italian bread (I prefer to use day old bread for this because you toast the bread)
