Winter Brussel Sprouts & Onion Sauté
Happy December! Seriously where in the world has this year gone? I apologize for my lack of posts this year… I have had a lot of change happening. Good change I think, but change none the less. My new job is going well, it is SO new to me, but thankfully I work with a lot of really supportive people. It is nice to know that people are there to work with you and not against you. Changing jobs has literally turned my life upside down..my schedule has changed, I have had many personal struggles and new hurdles to try and conquer this year. To say the least. Changes is…

Mushroom PepperJack Bison Burgers w/ Zucchini Chips
It’s Burger Month!! #burgermonth Kita over at Girl Carnivore has an amazing line up for 30+ bloggers that are all posting burgers for the month of August. I have been lucky enough to know Kita for many years now, she is my food blogging idol. I was lucky enough to be one of the bloggers she included!! Kita is awesome, and also owns Pass the Sushi. Check this girl out. Her recipes are EPIC! Of course, it being burger month I had to come up with something worthy of the event. To me having burgers in the summer is a must. Growing up in Kansas City (Kansas NOT Missouri), you…

Homemade Salsa
Holy August Batman! Is anyone else’s garden exploding? Mine is! Every day I am bringing in more tomatoes, squash, peppers, herbs… I mean don’t get me wrong, I love having fresh vegetables and herbs right outside my door, but good lord. There could be a small farm stand at the end of my driveway and I could STILL have too much. Makes for a happy coworkers and lots of ideas for a food blogger 😉 All kidding aside I really do enjoy having a garden. It keeps me busy and I love knowing where my food comes from. Clearly anyone who knows me, knows that I am all about eating…

Peach Necatrine Butter
Oh, Hey… What’s up? Long time no blog. Can we chat for a second? I just wanted you to know it is nothing personal. I don’t hate you, or dislike you even. In fact, I care for you very much. It just, well… Things get in the way sometimes. Sometimes there’s this thing called life, that acts like a tornado and rips through your life and tosses around all your belongings, even that lamp you love that your soon to be hubby hates. It’s kinda crazy. And little annoying. Scratch that, SUPER annoying. My life has been a jumbled mess of decisions, wedding planning, renovations, work and just life. Napkins,…

Zucchini Fritters
I am swimming in zucchini… So many zucchini! and since I have a person in my house that hates zucchini, I have to come up with creative ways to get it into dinners. Lucky for me, there is one night a week right now where I am on my own for dinner, so guess what my dinners have consisted of. Wow, how did you guess? Yup, zucchini. I will pretty much eat it any which way, but I wanted to try something different. Do you ever get like that? Where you know there are a million ways you have already had something, and they were all super delicious but you…

St. Patty’s Green Mint Smoothie
♣ Happy St. Patty’s Day! ♣ Hope everything is having a lovely St. Patty’s Day so far! Are you doing anything special? Celebrating in any special way? I really haven’t done much celebrating for St. Patty’s Day since I was in college, which is a-ok with me. Patrick and I are off to St. Louis this weekend for a wedding. Which should be great! His birthday is on the 19th so I am glad we are going to be able to go and celebrate with his family and friends. I am sharing a smoothie today. I have been on a smoothie kick lately! I have had so many of them! They…

Blueberry Rolls
‘Tis the season for blueberries! Ah yes, b.e.a.utiful blueberries. I am lucky that I never have to purchase blueberries because my mom has about 20 blueberry bushes. Which means that if I want blueberries, there are most likely 14 bags of them in the freezer, some on the bushes, or some on the counter. Spoiled. I know. There are just so many things to do with blueberries though. Shakes, smoothies, muffins, scones, breads, salads, with meats, cakes, ice creams, or just as snacks you pop in your mouth. Blueberry muffins have to be one of my favorite things in the entire world. I remember coming home to the smell…

Lemon-Honey Drop Cookies
Well, we had a very brief few days of sun and now we are back to the cloudy dreary weather of the Northeast. I am ready for some sunny days people!! The Hot Lunch show was SO much fun! haha…I cannot even tell you how excited I was to watch those boys up on stage. I was even dedicated a song! Woooo! 😀 The lead singer Higgins takes a break and says “This next song is for one of our friends Raven, Raven where are you?” ::throws up arms and screams:: “AHHHH RIGHT HERE!!!” …they then proceeded to play my most favorite song of theirs called Thumbs up. I talked…

Raspberry Shortcake…Well, sort of.
I have a confession… I am totally excited about Friday! Why you ask?? Well, because a band named Hot Lunch is playing at a bar named Maximum Capacity in Chicopee, Mass. Did you just say hot lunch? YES I DID! It is a local band that I come to know and love. They however have not had a show in a very long time so I am so excited to go out and support them this Friday. I even talked to 3 of the band members on this past Saturday putting in my requests for their playlist, haha. I’ll be the one down in front dancing around singing at the…

Kabobs
Love summer time! Summer time to me is so much fun, not just for the sun and vacations…but for the grill! I find that if I am ever in doubt as to what I should make for dinner…I head for the grill. You can make some of the best food on the grill….although I have to admit I have had some mishaps. Like, for example, the first time I tried to make pizza on the grill. Let’s just say the people at the grocery store saw me twice in one day, one hour apart. 😛 Anyways, I wanted to make something on the grill and kabobs are always a good…

Cucumber & Sour Cream Salad
This one of my favorite recipes…has been for a really long time. My mother taught me to how to make it and her grandmother taught her how to make it. I know that many people have probably heard of it, eaten it, made it…but it is a family tradition that I wanted to share so others could maybe do that same with their family. Ingredients: 2-3 small cucumbers 1/2 cup of light sour cream (cannot really use non-fat for this it has too much liquid) 1 teaspoon pepper 1 tablespoon dill 1 teaspoon kosher salt I like to peel my cucumbers when I make this salad, but it completely up…

Garden Fresh…
On top of everything else I do…I enjoy working out. I really try my hardest to work out 3 times a week (on top of playing softball in an adult league, which I do 2 times a week). So, a lot of times I really would rather just go to the gym right from work…that way I don’t get settled at home and then not go at all! haha 😉 Anyways, so after my intense cardio session this evening I came home wanting something light. Then remembered…”hey! I have a ton of fresh veggies in my garden!”….BINGO! I made a salad this evening with all fresh ingredients right from my…
